Testing and working on graduation stuff and working on prospective college schedules and talking about Facebook and advising about jobs and listening to electric guitar "music" and piano practicing and, boy, am I tired.

I don't know exactly what I do all day that just wears me out, but I'm tired.  But it's a good tired.

And somehow I managed to make yummy salmon patties for supper.  Even if I do say so myself.  Which is what this blog is all about, right?  An older man that hubby and I went to see about a month ago had made a trip to Alaska and caught a "million" salmon.  He canned some of them and froze some and gave us some of both.  The canning jars didn't look too promising but tonight I braved them and fixed those patties.  Hey, they are just about the greatest things I've ever had.  To go along, we had ham and cheese skillet potatoes and green beans.

mmm, salmon patties sound good!!
Did you eat them as a 'burger' or did you just eat them plain?
I'm planning to get some canned salmon soon and make salmon patties, since my midwife wants me to eat more fish :)
Right now I'm forcing down tuna and saving some salmon fillets for a special dinner :D
but canned salmon isn't much more expensive than tuna, so it would be a nice middle ground.
I hate tuna.

Oh, I love salmon but I usually forget to buy it. Hubby loves tuna and I can eat it but it's not my favorite. He does make a wonderful tuna salad that is much better than mine and I really do like that in moderation. :)
Here's what I put into my salmon patties last night:
1 jar (can) of salmon, drained well (I leave in the bones because they are a great source of calcium but you can take out the bones if you want; they are small and can be crushed up easily)
3/4 cup oats (quick soaks up the liquid faster)
3/4 cup milk
1 beaten egg
1 t. garlic salt
2 t. onion powder
1/2 t. poultry seasoning (you could use dill weed or something else that you really like)
After draining salmon well, mix oats, milk, egg, and seasonings. Shape into small patties and fry in about 2 tablespoons of olive oil in a heavy duty skillet. I used my iron skillet. You could just use cooking spray and cook them in that but the olive oil gives a very nice flavor and a nice crispy outside.

Just plain. Some people put ketchup on theirs. I saw a recipe for a good looking cucumber sauce but I've not tried it.
