    What's For Dinner Wednesday - Roasted Chicken with Lemon Rosemary Rub

    LEMON AND ROSEMARY CHICKEN  

     

    1 lemon
    Several sprigs of rosemary
    Salt and pepper
    1 tbsp. olive oil
    3 lb. chicken, cut into serving pieces

     

    .Rub chicken with olive oil and lemon juice mixture. Sprinkle individual rosemary leaves over top of chicken or stuff whole sprigs under the skin of the chicken.  Place thin cut slices of lemon on top of chicken and place in roaster and roast for about an hour.

    This is one of the meals I am making this month for my OAMC club.  I made it for our family a few weeks and it was great.  Along with the chicken I roasted garlic cloves, onions and mushrooms.  You could add any vegetables you like in the roaster.  It turned out really good!
