May. 31, 2006 - Favorite Bran Muffin recipe! Enough to fill an ice cream pail!

Here is our favorite bran muffin recipe.  It makes enough for an ice cream pail and keeps for 4 weeks in the frig ~ wonderful for surprise company!  We love it in mini muffin tins (with choc. chips).

Bran Muffins

*Combine and stir in 2 cups boiling water

4 cups All Bran

1 tsp. salt


Add 4 cups buttermilk (or milk) and cool to lukewarm.

Cream together:
1 cup shortening
3 cups sugar

Add 4 eggs ~ Mix well.  Stir into above bran mixture.

Combine:
5 cups flour
2 cups 100% Bran
5 tsp. baking soda

Add to 1st mixture ~ stir to dampen.

OPT:  raisins, fruit, dates, choc. chips

Store in frig up to 4 weeks.

Fill greased muffin tins 2/3 full and bake at 375 degrees for 20 - 25 minutes.
