Jul. 10, 2008 - My latest favorite recipe - Coffee Cake International

What have you made lately that tasted so good?

I made this instead of muffins for a snack after church (for a farewell lunch)....  Very yummy!

Coffee Cake International

Cream together:
1/4 cup butter
1 1/2 cups sugar (I decreased it to 1 cup with no problem)

Add to the above 3 eggs and beat until light and fluffy.  Add 1/2 tsp. almond flavoring.

Combine 3 cups flour and 1 1/2 tsp. baking soda.

Add to creamed mixture the flour mixture alternatively with 8 oz. of sour cream.

Divide batter between two 9' round cake pans or put in a 9 x 13 pan (I did the
9 x 13)

Spread Cherry Pie Filling on top (I used Wildberry) and sprinkle with
Streusel Topping = Combine 1/2 cup flour, 1/4 cup sugar and 1/4 tsp. cinnamon.
Cut in 1/4 cup butter until crumbly.

Bake  at 375 for 25 to 35 minutes.  (I cooked mine longer)
Enjoy.
