I am still trying to use up zucchini from our garden. I have shredded quite a bit and have it in the freezer for future loaves of zucchini bread. My girls would love it if I make more zucchini bread, and I plan to. But, I wanted something else. However, my girls are also not enjoying most of the other dishes with zucchini in them. This was an ok hit. I think most of it was mental for them, and perhaps if I shredded it into the sauce next time, that would help. But, I made zucchini lasagna.
Take your regular lasagna recipe and swap out zucchini for the noodles. If you are looking to add something new to your lasagna recipe, my favorite ingredient in my lasagna is cream cheese. I usually plop chunks of it all over with each layer that I do. It adds a yummy creamy bite when eating your lasagna.
You could also stir it in with something else to make it less obvious, but I like the bites of cream cheese when I'm eating it! I've been eating leftovers for breakfast and lunch. I've got one piece left, if I can keep it away from hubby. |
Zucchini cookies are delish. WHat about Zucchini cakes or fried zucchini with a ranch dip?
