Well, I said I was going to post this on Friday. But, I'm actually sitting in quiet this morning, so thought I'd do it today. Just in case tomorrow I'm not quite so fortunate.
Cranberry Salad Recipe
1 pkg fresh cranberries
5 Satsuma mandarin oranges
1 pkg raspberry Jell-o
1 can crushed pineapple
Chopped walnuts (probably about 3/4 c.)
1 pkg cream cheese
1 pint whipping cream
Just cover fresh cranberries with water in a pot. Boil until they all pop. Drain just a little bit of the water, so the salad won't be too runny. Pour in and stir around the package of raspberry Jell-o. You can use regular or even Diet.
Peel oranges and blend them in a blender. Pour into the pan. Drain some of pineapple juice and pour into the pan. Stir in the chopped walnuts.
Generally, I get this to make 2 recipes. 1 9x13 pan and an 8x8 pan, or a I have two pans that are smaller than 9x13 and I'm not sure what size. Anyway, evenly distribute the cranberry mixture between pans. You don't want it to be too high in the pan.
Next whip the whipping cream, when almost stiff enough add in the cream cheese and a little sugar (or make it as sweet as you prefer).
Spread over the top of the cranberry mixture. ENJOY!! It's a family favorite around here.

OK, they don't all have to do with rolling it out. But, I'm so impressed with myself, I just have to brag a bit. It's now in the oven. Everything else is loaded in the car. We head over to my mom's house for the afternoon and then to my great aunt's house for dinner. Woo hoo!! I made pies! They look decent and they don't taste bad, either! (The green color (HEIDI) I'm sure is only your screen. OK, so maybe it's my photo taking abilities. I promise, in real life, they are not green.) |
