
Well, the menus are working relatively well. So, I am feeling accomplished at something. We did have some alterations last week, but I had a plan to work from, and that was good. Now, since I have just declared that I'm doing pretty well at this, it WILL completely fall apart this week . I hope not, but it has been a trend once or twice in my life.
This week:
Brown rice & lentil casserole - that I stole from another menu plan
Maple Glazed Chicken - cuz' we didn't get to it at least
Ham & Potatoes
Homemade tortillas with chicken/black bean burritos
The rest will be leftovers or ?
For lunches I'm doing salad, tuna, and quesadillas.
I'm excited to try the chicken/black bean burritos. I got the recipe from a friend, who says her whole family eats it and really likes it. And - IT'S EASY!!! This is always a big bonus for me .
2 chicken breasts
2 cans black beans
2 cans Rotel tomatoes or salsa
Put in a crock pot, about an hour before dinner shred the chicken and see if it needs more liquid. You can even put the breasts in frozen. Is that easy or WHAT???
I have also been wanting to try and make tortillas, so I'm going to give it a whirl. I'll let you know if I really get it done or not. And, the results.
