Cheese Enchiladas
Hi Everybody, sorry it's been almost a month since I last posted. I attended a really fun Mom's Night Out at my friend Amy Beth's house and brought these really yummy crock pot enchiladas. I've had a few request the recipe so here it is:
Crock Pot Cheesy Enchiladas
1 lb ground beef OR chicken (dark meat is really good)
1 small onion or onion granules
1TBS of Mexican seasoning (I use Pampered Chef, but others will do)
1 Can of Mushroom Soup
A good squeeze of lime juice (1 TBS or so)
1 small can of diced green chiles
1 can (10-12 oz) Enchilada Sauce
10-12 Corn tortillas (non-fried)
12 OZ shredded cheese (at least 12 oz. HA)
Sour Cream and Tortilla chips to eat with it..
Mix cooked meat with soup, green chiles and chopped onion. Pour enough sauce on the bottom
Of the crock pot just to cover it. Place about 4 of the corn tortillas on the bottom, put enough of the meat mixture
On top and sprinkle cheese over it. Keep doing this in this order until you end with cheese on top. Cook on High for about 3-4 hours although I’ve found if you let it cook on low for about 8 hours, it tastes much better. The sour cream and tortilla chips are great to eat with it.

I have to tell you that I'm really excited about making my own laundry detergent and vanilla flavoring from some recipes that mom2fourtreasures has posted on her blog. I go through laundry detergent like crazy and we all know how expensive real vanilla is.

Thanks! I'll have to make it on Saturday when Steve is at work aaaaallllllllll day, so maybe it'll be gone or I can hide it in the fridge. Corn tortillas kill his blood sugar. It's crazy to have to go around sneaking good food isn't it?

These were so yummy. Have you tried the laundry detergent yet. I made some today. It took all of 10 minutes. 1penny a load yeah. I love getting new recipes, post any more that you really like.

That sounds good (except for the green chillies). We're just not overly spicey eaters. We eat just a little spice. I make an enchilada casserole and use whole wheat tortillas. Would that work in this one, or does it have to be corn? Sorry. Don't mean to cause trouble! : ) It's just that I just bought a case of ww ones yesterday.
Do you normally go to mom's nights. If you do, maybe we could carpool to one sometime. I miss going to some of them.
Where did you buy your washing soda and soap to make the laundry detergent? I have the Borox, but not those 2 yet. James usually has to run these errands for me (he's a lifesaver and a sweetie), so I don't want to have to have him searching any more than I have to.

Just stopping by to say hey. Haven't seen you in awhile. Hope everything is going good. Did ya'll have a storm last night? One blew threw here. Tracy and I were outside trying to take down the pop up in the middle of the lightening. UGH. I was scared to death.. I kept yelling to Tracy, I'm scared, let's just go, we are going to die! LOL. It is funny... now!
We are on spring break this week... just enjoying some down time. Hope you are having a great week. Don't forget, no church tonight!

Yes, buy the LIME JUICE, Annemarie..everything tastes better with lime. In Mexico we put lime juice on EVERYTHING. They serve it with everything too. My little one (five months at the time we moved there) used to suck on a half-lime in his little walker. I have a picture!
I need to feed about 20 people this weekend, Dawn, how many people will one of these crock-pots of Enchiladas feed?
