Mar. 24, 2009 - ~Week of the Zucchini - continued

Yesterdays menu consisted of a yummy Zucchini casserole, zucchini muffins, and a side salad. We were able to use about 5 or 6 zucchini from the big box we have and the cost was about 6.00. The muffins were eaten for a snack as well as with the dinner AND hubby ate the last two for breakfast this morning sooooo....suffice to say..... we got a little more than just dinner from the days recipes.
Here's Belle finishing up the tomato layer on the casserole. This casserole was absolutely fantastic! Pleasantly surprised and everyone really enjoyed it.
Recipes like this will really be a blessing if we start to have bumper crops from our vegetables. This particular recipe called for a layer of zucchini (after buttering the pan), a layer of green and red bell peppers (I only used green because red were 3.99 PER POUND!), a layer of onions, and a layer of tomatoes. After layering all those yummy vegetables we started shaking the spices.....basil, oregano, a little salt and a lot of garlic powder. And lastly... we sprinkle on the cheese! Shredded cheddar is what we used and we did this generously
