Whew, we have everything prepared for days 2, 3 and 4 of Father's month.For Day 2 or June 2nd we made the Father's Shirt Cake that I blogged about before that I found on the Family Fun Website.
For Day 3 or June 3rd we got a autograph picture frame at the Dollar Tree. It has an opening for a 4X6 photo and then room to write messages on the matting. I had each of the kids write a little message to Dad on some scrapbook paper scraps and we cut them out and put them on the matting. It looks really good. Dad has been asking for a new photo of the kids for his office. The one he currently has the 2 year old was a newborn!
For Day 4 or June 4th I will be making Amerian Curry and Rice Pilav. This was a specialty of my Mother-In-Law and I thankfully learned to make it before she died. (Although I never got brave enough to try it on my until she passed away last February.)
Here is the family recipe if you want to make something DELICIOUS!!!
Grandma Jean's Armenian Chicken Curry
3 Pounds Chicken Breast
1 Large Yellow Onion
3T Madras Curry Powder
18 Ounce Can Tomato Sauce
Butter
Fresh Garlic
Salt to taste
Preparation:
Cut up onions really fine. Saute onions and garlic in butter. When translucent add 3T curry powder mixed with enough water to make a paste. Add Chicken to this mixture to sautee as well as tomato sauce. Simmer on a low heat until meat is tender. Make sure there is enough liquid in the pan. Always add boiled water. Continue cooking until meat is tender.
Grandma Jean's Amernian Pilav
2 cups Long Grain Basmato Rice
1 stick of butter
3 Potatoes
Preparation:
Wash rice thoroughly and then par boil. When rice is slightly soft drain in colander and rinse with cold water. Set aside.
Put butter in large pan. Sautee potato slices slightly, then line the bottom of the pan with the potatoes. Add par boiled rice, put pats of butter onto rice. Cover with a handtowel to keep steam in. Simmer lowest heat for 1/2 hour to 3/4 hour.
If you do the rice "right" when it's done you can flip it over into a serving dish and will have the most wonderful crusty potatoes atop this delicious fluffy rice. I of course have not been able to get it "right" yet, but it tasted pretty good even if you do have to scrape the potatoes off the bottom of the pan! LOL
I know these recipes are little hard to follow, but English was my mil's 3rd or 4th language and this just has her written all over it, so I just can't make myself fix it all up! LOL By the way if you have never read my Mother-In-Laws story, grab a cup of tea and click here. You are in for a treat!
