One thing about moving to a new town, in a new State, is that it’s hard to know where to live when you don’t know anything about the new place. (Or anyone in the new place!) When we moved here last Spring we found a house we like and could afford while still keeping out house in Las Vegas. (Since it won’t sell!) We like where we live, but it turns out that our “life” seems to happens in an ajoining town which is about 20 minutes from our house. The ajoining town is where our church is, our homeschool group and most of our friends. Because of this I am now driving the 40 minute round trip 8 times a week! LOL One of the hardest parts about this for me is not eating out! (Especially when we have to be over there first thing in the morning.) I am not a morning person anyway, so getting everyone ready to walk out the door AND making breakfast is a challenge for me. One of the latest things I am trying is to have easy and filling breakfast foods on hand to make the mornings we have to run out of the house easier.
When I was a kid my mom almost always had this muffin batter in the refrigerator. It’s easy to make, keeps for a looooong time in the fridge and it’s YUMMY! (Plus if you bake them in paper cups they are easy to eat in the car! LOL)
Raisin Bran Muffins
3 cups sugar
5 cups flour
5 t. baking soda
2 t. salt
7 cups Raisin Bran cereal
4 cups buttermilk
4 eggs (slightly beaten)
1/2 tsp. vanilla
1 c. vegetable oil
Preheat oven to 425 degrees. Mix together all ingredients in large bowl. Bake 12 – 15 in greased muffin cups sprayed with non-stick spray or paper-lined cups. Makes 4 dozen muffins. Stores for up to 5 weeks in the fridge. (Although they never have lasted that long at our house!)
(Other things we do to make our car time more bearable is keeping juice pouches, granola bars, and fruit snacks in the car. We also keep educational CD's to listen to so we can learn as we drive!)
We have a DVD player in the car and I subscribe to Netflix so we have an endless supply of DVDs for the kids to watch. They have a lot of educational choices, from science to math to IMAX to foreign language instruction. And my kids really absorb the information this way! It really helps me feel like we are getting something out of this otherwise "dead time".

I'm not a morning person either and I live out of town so we are often on the road early too. To take pressure off of me and my kids, we set out our clothes the night before, get our gear all packed (whatever books, cds, coloring etc. they want) and on these days, like you, I opt for a breakfast they can eat on the go. Here are a couple of ideas healthy but kid approved & easy breakfast ideas:
1. Take a whole grain (flax, wheat etc.) tortilla wrap and spread peanut butter/almond butter (whichever you like) on it. Chop a banana onto the pb and wrap it. Voila! Instant breakfast (or lunch, snack). You can add a drizzel of honey or a schmere of jam too. Add whatever floats your boat...these aren't great made ahead because the banana gets a little funky but they only take 1 minute to make in the a.m.
2. Take a whole grain tortilla, add scrambled eggs (these can be doctored up with chopped red peppers, chopped deli ham, crumbled bacon or sausage and melted shredded cheese), wrap and that's one nutritious breaky!
Grab a leak-proof container of milk and you're set :-)
We car-school some too! We live about 20 minutes from town. Along with meals in the car, we have found kids can use this time to learn as well. Have games for the younger ones learning phonics like ABC bingo. He has to find 3 things in a row that start with the letters in those boxes. Or find short words he knows like cat, hat, cow, Stop,... And find 3 in a row. When he finds 3 in a row he can chose a new card or a new activity. We use the trays with character on them and has sides for markers and such. He can choose magnetic tanagrams, wikki stick letters or shapes, and so on.
My 4th grader reads a biography book or does Math or studies Presidents, capitals,... We are thankful they don't get car sick like their dad!
Sometimes we just have free reading time or let them bring toys to play with. But we use these times to entertain them as well as get school in without the day seeming ever so long on town days.
