Make this cake!
I suppose I owe my faithful readers a bit of a reward for sticking with me. Or perhaps this is an incintive to come back. I suppose I also owe you a bit of self-revelation. I adore cake. I love it like I love air. I will go to any event, no matter how unpleasent it might turn out to be, if only there will be cake. This is the most magnificent summertime cake. You must make it and eat it with gusto. Even better, invite me over and I will share it with you.
Strawberry Cake (good enough for company, but then there's less for you)
1 strawberry cake mix of your choosing (GASP!) 20oz. frozen strawberries, thawed (that's an oxymoron - thawed,frozen berries) 8 oz. Cool Whip 3.5oz instant vanilla pudding
Bake the cake mix according to package directions in a 9x13 pan. Let it cool completely and then poke large holes in it with a wodden spoon, or if you're not concerned with hygiene, your finger. Puree the berries and whatever delicious juice has accumulated in the bottom of the bag. Pour this gorgeous berry goodness over your cake and spread it around to urge it into the holes. Pop that baby in the fridge for at least 2-3 hours. No mix your pudding with 1 cup of milk and fold in the Cool Whip. Dump that on top and back in the fridge it goes for another 2ish hours. You can garnish it with fresh strawberries or mint leaves. It is a slice of summer on a plate. I'm free this weekend if anyone wants to share : ) 9:57 PM - Aug. 24, 2006 - post comment
