I'm always on the lookout for something easy, healthy and inexpensive to make for the family. I've been watching the food network again and got a really good idea watching Everyday Italian.Cook up one or two boxes of penne pasta (use whole wheat to make it even healthier), while the pasta is cooking heat up some leftover chicken in a little olive oil (about a tablespoon). Once it's steaming hot, put off to the side. Drain pasta and toss with a little light margerine. Plate the pasta, top with some chicken, some shredded parmesan, mozzarella and romano cheese (I got a good deal on cheese this week so I used Kraft Italian cheese blend) and garnish with some fresh chopped tomato. Salt and pepper to taste and wow. We all loved it. I realize that I should have taken a picture of it because it was not only delicious, but beautiful as well.
