• Fri 4 Jan 2008 - Soup Recipe - Southwestern Meat and Potato Stew

Here's a great, easy soup I made today for dinner....

2 lb Ground Beef
1 Onion, chopped
1 cup water
1 (29 oz) can tomatoes with liquid, cut up
1 (16 oz) bag frozen corn, or one can corn with liquid
3 medium potatoes, peeled and cubed
1 cup salsa
1 tsp salt
2 beef bouillon cubes
1 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp pepper
2 T all-purpose flour

Brown ground beef and onion; drain. Add 3/4 cup water and all remaining ingredients, except flour. Bring to a boil; reduce heat. Cover and simmer for 1 1/2 hours. Combine flour and remaining water; stir into stew. Cook and stir until slightly thickened. Serve with shredded cheese on top.

I haven't thought about putting salsa in soup. Another duhhhhh moment for me. I like your last post too. It is easy to get carried away with life and forget (conveniently sometimes) to be the help meet we are called to be. Thanks for the reminder.

Hello Dear,
Just stopped by and was catching up on your past posts & wonderful photos. The soup sounds really yummy - being it's supper time, I'm really hungry but the chicken is taking a long time - hmmmm, I wonder if my oven is dying. Are you going to the MACHE Conf. this April - it's in Duluth? I just made reservations for our family.
