• Mon 21 Jan 2008 - Yummy, simple breakfast - Cheese Bread
I made this the other day in looking for something different for breakfast that would be quick and easy but have good protein for my pregnancy. As long as you can get cheese at a decent price, it works well! This comes from the "Whole Foods for the Whole Family" cookbook by La Leche League.
2 T water
2 C shredded cheese (the recipe calls for Longhorn but later says you can use whatever cheese you want)
1 egg, beaten
6 slices bread or toast (I did toast - I think it made more than 6 slices as well)
salt and pepper to taste
Bring water to boil over low heat in 8-inch skillet. Add cheese, stirring until melted. Stir in egg. Cook until white is set. Spoon onto bread; season to taste.
6 servings (although I think it stretched a little farther for our family)
The recipe was definitely a hit - who doesn't like eating warm, melted cheese on bread and really though it seems like a lot of cheese, the cost is still cheaper than my family eating dry cereal! |
