Ok - I made it on today for simple meal #2. I just made this yesterday and it was really good and fast. It uses up leftover ham.

Ingredients:
leftover ham
sour cream
potatoes
garlic powder
dill weed
cheddar cheese

Preheat your oven to 350. Take your leftover ham and chop it up fine - I used our mini-blender. Then take some sour cream and mix it into the ham until it's well-moistened. Then add some garlic powder and dill weed. Bake a few potatoes in the microwave then slice them in half and put them in a glass pan. Use a knife or fork to break up the potato some and put the ham mixture on top and kind of mix it a bit into the potato. Bake the potato until everything is nice and hot - 15-20 min. or so is all I did it for. Take it out and put shredded cheddar cheese over everything and let it melt. Then serve it up!

We had this yesterday and it was a great way to spruce up baked potatoes! Enjoy!
