I made this today and it went over pretty well with the kids. I didn't have the fresh parsley but it still tasted great.
Tomato Pie I totally guessed on the amounts...
1 Pie Shell Tomatoes (Chopped) Zucchini (Sliced/chopped/shredded) or any summer squash 3 Eggs Fresh Basil Fresh Parsley Garlic (Chopped) (I used 2 large cloves) Salt Pepper
Roll out pie crust. Mix the rest of the ingredients and pour into pie shell. Bake at 350-375 for 45 minutes or so. Enjoy!
