It's been a while since I was here! We moved during the month of Nov. which thankfully went quite well even though my thyroid still isn't normal. I'm really enjoying the new place. It's so nice having a basement again and with the in-floor heat, it's quite comfortable even though it's not completely finished off or anything. Thanksgiving was a great time with all of my family together at my brother's place nearby here. Now it's hard to believe Christmas is coming up soon already! We'll be traveling to the Chicago area to see my parents for about a week. Should be good!
We made some cut-out cookies today and I decided to try making peppermint cut-outs instead of the basic sugar cookie. They turned out really good! I thought I'd share the recipe in case someone wants to try them!
Peppermint Cut-Out Cookies
Cream together:
3/4 c. margarine
2 eggs
1 c. sugar
peppermint extract to taste ( 1/2 tsp)
Add:
2 1/2 c. flour
2 tsp baking powder
1/2 tsp vanilla
Chill dough until firm. Roll out on floured surface. Cut out cookies using desired shapes. Bake at 375 degrees. ( about 9-10 min.)
Peppermint icing:
1/2 box powdered sugar
1tsp butter
hot water to moisten
1/2 tsp peppermint extract
Drizzle icing over cooled cookies. Sprinkle with crushed candy canes over icing.
Instead of using this icing, I just used a bunch of powdered sugar with some butter and milk and peppermint extract and mixed it together to make more of a frosting instead of icing and I didn't put the cancy canes on top. On the last small batch of cookies I did put some crushed candy canes on top of the cookies before baking them. I was surprised that they actually kind of melted in a bit and made it really good! Anyways, just another idea! Enjoy!
