I made this the other day in looking for something different for breakfast that would be quick and easy but have good protein for my pregnancy. As long as you can get cheese at a decent price, it works well! This comes from the "Whole Foods for the Whole Family" cookbook by La Leche League.
2 T water
2 C shredded cheese (the recipe calls for Longhorn but later says you can use whatever cheese you want)
1 egg, beaten
6 slices bread or toast (I did toast - I think it made more than 6 slices as well)
salt and pepper to taste
Bring water to boil over low heat in 8-inch skillet. Add cheese, stirring until melted. Stir in egg. Cook until white is set. Spoon onto bread; season to taste.
6 servings (although I think it stretched a little farther for our family)
The recipe was definitely a hit - who doesn't like eating warm, melted cheese on bread and really though it seems like a lot of cheese, the cost is still cheaper than my family eating dry cereal!
Here's a great, easy soup I made today for dinner....
2 lb Ground Beef
1 Onion, chopped
1 cup water
1 (29 oz) can tomatoes with liquid, cut up
1 (16 oz) bag frozen corn, or one can corn with liquid
3 medium potatoes, peeled and cubed
1 cup salsa
1 tsp salt
2 beef bouillon cubes
1 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp pepper
2 T all-purpose flour
Brown ground beef and onion; drain. Add 3/4 cup water and all remaining ingredients, except flour. Bring to a boil; reduce heat. Cover and simmer for 1 1/2 hours. Combine flour and remaining water; stir into stew. Cook and stir until slightly thickened. Serve with shredded cheese on top.
Here's my favorite homemade pizza recipe. The crust is so soft, delicious, and easy! The topping makes more than 2 pizzas-worth so I often freeze the rest for another pizza later.
Pizza Crust
4 c flour (I sometimes do 1/2 whole wheat and 1/2 white flour)
4 1/2 t yeast
1/4 c sugar
1 t salt
1/4 c oil
1 1/3 c warm water
Mix all ingredients and knead. Let rest 10 minutes. Divide dough in half. Roll into 2 12-14" circles directly in greased pans or onto pizza stone. For parbaked crust, bake in 375 oven for approximately 10 minutes. For pizza, add pizza sauce (see below), cheese and toppings and bake in 400 oven for 15 minutes (maybe a little less or more). For best results cook one at a time.
Sauce
1 small can tomato paste
1 small can tomato sauce
1 smaller sized can whole tomatoes drained
seasonings (garlic powder, minced onion, black pepper, basil, oregano, salt) to taste
Lately when I go on nature walks, I've been taking pictures of the wildflowers I see and then looking them up at home to try to identify them. Once I identify them, I go online to find out more about them. It's been interesting to find out some different herbal uses for some of these common wildflowers that I've found. Here are the 2 I looked up tonight and what they're used for:
Common Yarrow
This used to be used during wartimes to treat wounds in soldiers. It would be placed on a cut and would help stop the bleeding. It has also been used with noesbleeds to help them stop quicker. Leaves would be placed up in the nostril! Hmmm - wonder if my daughter would let me do that?! It can also be used to help fight fevers. The leaves can be used to make a tea which helps with the thirst of fever. The yarrow then helps the body to sweat more which helps get rid of the impurities quicker. The flower head can also be used to make a lotion to place on the body to help with the fever.
Common Mullein
Mullein is helpful with respiratory problems - especially bronchitis. The dried leaves and flowers can be used to make a tea by pouring 1 cup of hot water over 1-2 tsp of leaves. Then you let this sit for 10-15 min., strain it and drink it 3 times/day.
Externally it can be used in ear infections by making an extract of the mullein and olive oil and putting it in the ear
So now if I can find enough of these plants, I can save them to try out some day! How interesting and educational identifying wildflowers in my area can be!
Here's a great recipe for a hamburger helper-type meal! We used to buy the hamburger helpers for those last-minute meals, but now that we have this recipe, I use it instead! So easy and good!
1 1/2 lb ground beef
1 1/2 cup elbow macaroni noodles (before cooking)
1/4 cup dried minced onion
1 t garlic powder
1 T chili powder
2 6 oz cans tomato paste
1 t salt
6 cups water
Brown the meat in a skillet. Add remaining ingredients. Stir and bring to a boil. Simmer, uncovered about 15 minutes or until mixture is as thick as you would like. Enjoy!

1 t baking soda
1/2 t salt
1/3 C oil
1/2 C honey
2 eggs, beaten
1 C mashed bananas (3 medium)
1/4 C hot water
1/2 C chopped pecans or other nuts
Sift dry ingredients together. Cream oil and honey in large bowl. Add eggs 1 at a time, beating well after each addition. Stir in bananas. Add dry ingredients alternately with hot water, mixing well after each addition. Fold in pecans. Pour into greased 5x9" loaf pan. Bake at 325 for 55-60 min. (check sooner to make sure not done early) Invert onto wire rack to cool completely before slicing. Freezes well. Yield: 12 servings!
