Yesterday I was checking up on my friends posts and over at Sweet Savages my friend Misti gave the recipe for her Pumpkin Pancakes that she tried this past week. Well, let me tell you, they are good! Tonight we had them with scrambled eggs and thick-cut, hickory smoked bacon. YUM! On accident some of my coconut oil didn't melt when being added and it was floating in the batter, so I 'fried' a little batter in it and Oh my! It was better tahn a funnel cake at the fair!!!
