Anyway, here it is. This is Allen's (Mr. Picky) favorite meal. I made it today and it was awesome!
Red Sauce
2-28 oz. cans tomato puree + 2 cans water
3-6oz cans tomato paste + 2 cans water
2-3 garlic cloves, minced
salt
pepper
parsley
basil
oregano
1 whole onion, peeled
Mix the tomato products and water together. Drop in the whole, peeled, onion (we don't like to chew onion but love the flavor). Sprinkle the top of the sauce with salt, pepper, generous amounts of parsley and oregano and 1/2 as much basil. Add minced garlic. Simmer all day or just a few hours. Makes about 4 qts.
Meatballs
3 lbs. ground round
2 eggs
1/3 c. tomato puree from making sauce
2-3 garlic cloves, minced
salt, pepper, oregano, parsley, basil
3 handfulls fresh romano or parmesan cheese
2 handfulls dry breadcrumbs (seasoned or not)
Mix all that together. Form into balls and drop into sauce. Simmer with the sauce all day.
1 meatball is 2-3 WW points depending on size
This makes a LOT of food. You can double it or freeze it. I use it for 2 meals. We have pasta and meatballs the first night and then meatball splash sandwiches the next night or for lunch. The sauce can be used for pizza, lasagna, anything that you need a red sauce for. |
