This is my Gramma's tomato soup recipe. So not only is it tasty, it makes me smile when I make it. Gramma still makes this a lot, only she has her own canned tomato juice. I haven't canned juice in a few years, so I have to resort to Campbell's. It's still good though.
Homemade Tomato Soup
1/2 stick butter
1/4 c. flour
2 c. skim milk
4 c. tomato juice
Salt
Pepper
Italian seasoning (optional)
Melt butter in a medium sauce pan. Whisk in flour, salt and pepper. Cook and stir for a minute. Whisk in milk. Cook and stir over medium heat until thick and bubbly. Stir in tomato juice and Italian seasoning. Whisk and stir until heated through.
