Freezer Pickles
Well, it's that time where our vines are producing more cucumbers than we can eat. We have found a fun and easy way to have a little summer in the winter by freezing our pickles instead of canning them.
Freezer Pickles
7 cups of cucumbers, sliced
1/2 tsp celery seed
2 cups of white sugar
1 large onion, sliced
1 tbsp Kosher salt
1 cup white vinegar
Combine all ingredients in a large bowl. Stir well and refrigerate for 3 days stirring every day. Pack into freezer containers, covering with brine. Freeze
Allow to thaw at room temperature or in the refrigerator for a few days when ready to eat. They will be crisp and yummy.
Makes 3 pints

We have twins!
Much to our surprise we picked one of our yummy cucumbers and
realized there were two growing together! Everyone was surprised
to see that God even makes twin vegetables. The picture is not to
good but we ate the cucumber before I realized it so I could not take
another one.

First tomato
One of the most exciting things to me about summer is the first red tomato! Here is a picture of my first one for 2006. But not to get to excited, I picked it and it had bottom rot much to my suprise! So, we treat the plant and wait for the next red tomato. Lesson learned, just because something looks good doesn't mean it has some rotten spots hidden!
