Carrot Muffins:

1/4 c butter- softned

1/2 c succanant

2 eggs

1 c plain yogurt

1 c shredded carrots

1/2 c flaked coconut

1/2 c raisins

1 1/2 c flour

1 tsp baking soda

1/2 tsp cinnamon

1/2 tsp nutmeg
In a small bowl cream butter and succanant. Add eggs and yogurt, beat well. Stir in carrots, raisins and coconut. Combine flour, baking soda, cinnamon and nutmeg; stir into creamed mixture just until moistened.
Bake at 375 for 15-18 minutes. |
