A while back I posted a few gluten-free recipes, but it's been awhile!
SO... here is my recent favorite!!
Chocolate-Pecan-Coconut Biscotti!!
6 eggs
1/2 cup melted butter
1/2 cup honey
1/2 tsp salt
1 bar 70% cocoa chocolate (Eclipse bar)
3/4 cup coconut flour
1 cup chopped pecans or other nuts (I was out of walnuts... my first choice)
1 tsp baking powder
Put the eggs into a stand mixer and whip for 3 minutes until it is filled with air and creaminess. Slowly add the honey and salt. In a small pan, melt the chocolate bar and butter together and stir well. Slowly add this to the egg mixture. Mix in the baking powder and coconut flour last. The mixture should scoop like biscuit dough (but give it about a minute of mixing because the coconut absorbs liquid to thicken the batter). If not, add a little coconut flour till it thickens up all scoopable like. I use a Silpat liner for my sheet pan, but if you dont have one, grease a sheet pan and put the mixture in a long log shape across the center of the pan and flatten out with your spatula till its about 5" deep, 1" high and however long it gets. Bake till the middle looks like baked brownies, the edges will be drier. Take it out and (I just used a metal off set spatula) slice into 1" segments, flip on their sides and bake 5 more minutes, then flip them all over again and bake 5 more minutes. Take them out, let them cool, store air-tight! I am dipping one in a cup of raw milk and its just TOO yuummy!! If I can get my digicamera battery charged up I will attempt to post a picture!
