Yes, I am back to the weekly menus...Not only do I do better with time management, I always know what we are having and I can shop more effeciently and CHEAPER!!!
So, here's our plan for this week.. (I may tweak it a few times, but I am trying to use only things already in the pantry or the freezer this week)
Monday, March 2 Cereal
Grilled Cheese Snowflakes (using tortillas cut into snowflakes and shredded cheese) apple slices, carrots
Chili (good cold day food)
Tuesday, March 3 Scrambled eggs, bacon, toast,
Peanut butter sandwiches, chips
Stuffed baked potatoes (using left-over chili)
Wednesday, March 4
Monkey Bread
Turkey and cheese roll-ups, applesauce
BLT's, tater wedges, carrots and apple slices(church)
Thursday, March 5 Chocolate Pop Tarts (on the go breakfast)
Lunchables for the kids, peanut butter and crackers for me (CO-OP day)
Beef Stew (slow cooker meal)
Friday, March 6
Homemade waffles with fruit
snack plate (cheese, apples, banana slices, crackers, ham and turkey) Hamburgers, homemade onion rings, corn on the cob
Saturday, March 7
I work today so the DH is taking over!!
Sunday, March 8
another day at work for me.. DH has it covered... =)
Monday, August 18, 2008 - What's for Dinner tonight....
Tonight we have Upward Cheerleading and Flag Football practice at 6pm... so, I thought I would put some ham from the freezer in the slowcooker and make little sandwiches with it on yeast rolls and maybe some oven fries and corn... Something easy but would be better than eating out...
Here's the recipe I am trying tonight.. I am substituting the cola with the Coke Zero (because it's all I have in the pantry)...and I am using a much smaller ham and just adjusting the recipe to fit it...
Cook Time: 8 hours
Ingredients:
1/2 cup brown sugar
1 tsp dry mustard
1/4 cup cola (Coca Cola, Dr. Pepper, etc.)
3 to 4 pound pre-cooked ham
Preparation:
Combine brown sugar and mustard. Moisten with just enough cola to make a smooth paste. Reserve remaining cola. Score the ham with shallow slashes in a diamond pattern. Rub ham with paste mixture. Place ham in slow cooker/Crock Pot and add remaining cola. Cover and cook on high for 1 hour, then turn to low and cook for 6 to 7 hours.
I will let you know how it tastes... hopefully YUMMY!!

This week we are studying France and I am trying to incorporate some "French" food into our menu... I got this great Emeril cookbook from Amazon, called "There's a Chef in my World"...I love it!!!

Ok... This is yet another busy week at our house... Sometimes it seems that I have trouble getting dinner on the table even when I have planned for it... *L*
We try to go out only once a week for meals and usually it is the night that we are the busiest or preferably on the weekend...*S*
So here's our menu for this week..
Monday: Texas Roadhouse...kidlets have soccer evaluations for Upward Soccer, so we are just gonna make a night of it...
Friday: Kids Meal (kids choice and they help make it) Crispy Chicken Tenders, Parmesean Potato Wedges, Chocolate Cake...
Snacks this week: Homemade Potato Chips, Rainforest Pizzas (rice cakes with peanut butter, dried tropical fruit, chocolate chips)
Update:
Now, I am going to being making bread this week... Something I rarely do... If anyone has a favorite bread recipe they would love to share (machine or oven) I would love to try it!!
Tuesday: Spaghetti with meat sauce (home-made), yeast rolls, iced tea
Wednesday: Meatloaf (Emeril's recipe), mashed potatoes, veggie from freezer, and I am gonna make a new cake for dessert... (Paula Dean's "Pumpkin Gooey Butter Cake)... YUMMY!!!!

This week is Thanksgiving week, so we are taking it light... *L*
Monday : Scrambled Eggs with polish sausage and mushrooms
Tuesday : Taco Soup with Flour Tortilla chips, Lemonade
Wednesday : Sandwiches before church
Thursday : TURKEY DAY!!
Friday : Left-over from Turkey Day and snacks with hot chocolate...(YUMMY)
Turkey Day Menu : Smoked Turkey, Mashed Potatoes, Sweet Potato Casserole, Green Beans. Stuffing, Yeast Rolls, Iced Tea, Pumpkin Roll and Apple Pie... YUMMY!!!
