The food allergy road.....
Well I wasn't sure when I wanted to post this, but I figure now is better than later. I am sorry if I was supposed to call anyone or e-mail anyone and haven't gotten to it yet. You will understand better through this post.
As you all know we eat Gluten Free due to 4 out of the 6 of us being Celiacs. Well we are almost 100 % sure Uriah also has it, but we are still waiting for the test results. I had a meeting with a pedi GI specialist and she was GREAT!!! We talked about Uriah but also the other children and myself. She said due to the symptoms I was claiming the children and myself were having we are NOT lactose intollerant, we are actually allergic to dairy! So ok, now I have to not only cut gluten but now dairy as well. Ok Lord, that is fine! I know I can do this.....
Well the following day I ate some peanut butter and had a really bad reaction to it. The day following I ate a casserole that had tomato sauce on it. I had a bad reaction to that! So we are now thinking that peanuts and toms are out for me also. That night Uriah was up constantly! The next day he had some really really bad bowels and severe diaper rash, I mean bad!!!! He was in so much pain the poor thing! So the nurse said it was most likely the tom sauce as well for him!
So the adventure begins! I have an appointment on Thursday for myself with an Allergist. After we find out what it making Momma so sick we will start with testing the children. My doctor is most concerned about me at the moment since I am having all these severe reactions to things. We need to know exactly what I can and can't eat! Then go from there!
So, I really just wanted to update everyone. I have been online doing research, talking to my doctor's office often, and just plain not feeling well at all! So things have been a bit rough for me to get extras done!
I will update you more as I know more.

Health
Well the kids are doing well on the Gluten Free diet. They ate some gluten on Sunday night and have been reacting this week. But other than that they have been great!! It has been a blessing to see them feeling better and acting like normal kids...if you can call my children normal! LOL
I am thinking about adding what we are eating and favorite GF recipes each day. We are eating lots of rice and beans and meals like that. I have found normal foods that they can eat and that has been neat as well. They are loving thier Cool Ranch Doritos and Cheeots!! They miss oatmeal though!! Oh well. I will get some gf oatmeal in the next few months.
I just made Daddy a really yummy strawberry birthday cake. It was really good. I also made the kids a carrot cake which they absolutely LOVED!!! I plan on making another one this week. I will take a pic of it. We freeze it by the slices and then have dessert for when ever we want it. It tastes really good frozen too. I am finding little treats here and there.
I have totally fall in love with Pamela's Ultimate Baking mix!! It is the best!! I also use her Wheat free bread mix. I have used that for rolls, pizza crust, and a special treat...Monkey Bread. LOL I will post what that is sometime.
Well I need to get off this computer. But I wanted to update everyone. We are doing well and Momma is working hard on thsi diet menu thing!!

Finding out...the big change!!!
Well the kids sickness turned out to be Celiac Disease. It has been a tough road since that day! Celiac Disease is simply put this way, a complete intollerance to gluten: wheat, rye, barley, and most oats. SO most things that you grab at the local store we can not eat!!
I must say that since we have been gluten free the kids and myself have been feeling dramatically different. Their behavior has changed dramatically!! That was the first noticable difference. Since the change if they get the littlest amount of gluten....they are terrible! Josiah gets violent and can't contol his temper. THe girls fight nonstop when they get gluten. Their legs and arms and necks hurt a lot when they get some also. It is terrible!!
I have found trader Joe's to be most helpful though! They have lots of gluten free things that we can use. They are also priced better than most places! I also joined a co op. That has been most helpful, when I can afford to purchase in bulk. We also have found one resturaunt that serves gluten free! Yeah!!!
So that is the start of our road. I will update more later!!
