I had a great time cooking yesterday.

We'd been without a huge selection of groceries for a few weeks and I just felt so blessed after getting stocked  up again I had to cook a special dinner for the family.
It helped me keep my mind off not feeling so great as I have a cold and am in the last weeks of the pregnancy.

The girls and I made apple crisp out of the tart apples that we picked from a neighbor's tree.

And then I made pork chops with onion and apple and potatoes with carrots and peas.YUMMY!

The potato that you see in the picture is heart shaped it is one we got from the local children's garden.
It looked like a large heart and so I sliced it to favor the shape and baked in butter and garlic in the oven.

A local friend asked did I have suggestions for healthy snacks she could provide for her five and 3 year old.

I thought I would compile some of our favorites here. Maybe I'll add a few a day.

Peanut Butter Balls

Peanut Butter
Powdered Milk or Malt

Add any variations of:

Coconut
Choc. Chips( I like using the mini chips)
Raisins
Wheat Germ
Sesame Seeds
Oats

Frankly I do all to texture and taste I don't really measure.

Mix till all sticks together and roll into small balls placing on cookie sheet and freeze.
Oats

We do a lot with old fashioned rolled oats. We just buy the Great Value brand from Wal mart but have enjoyed steel cut oats from a bulk foods place too.

Here is our favorite oatmeal cookie

Cape Cod Oatmeal Cookies
This is taken from the Fannie Farmer Cookbook

1 1/2 c. flour
1/2 tsp. bs
1 tsp. cinn.
1/2 tsp. salt
1 egg
1 c. sugar
1/2 c. melted shortening
1 Tbs. molasses
1/4 c. milk
1 3/4 uncooked oats
1/2 c. raisins
1/2 c. chopped nuts

Oven @ 350 for 10-12 mins

Now I have changed a lot at times and had wonderful results.

For instance I have added bran and whole wheat flour
And used coconut oil and milk in place of others.
I have added all sorts of nuts and fillings ( simply press a little thumb print in the center of cookie )
I have used chips of all kinds too. Vanilla, Cherry, Choc.

A very fun versatile base recipe!

We have sold these and had good response.
Dairy Treats

We have been loving our yogurt, cottage cheese, pineapple, berries, and peaches.
Coconut milk and coconut are great to add too.
There are many ways to make quick snacks with these.

Smoothies if you add ice

We often mix by hand all together and add rice and it is kinda like the consistency of a lumpy pudding, blender mixed is creamy smooth.

We often do a banana berry smoothie ice, banana, milk, vanilla. Again coconut milk is really yummy and yogurt instead of milk is good too.

I am doing some research on fermenting grain. I have read articles i the past that are saying that most processed boxed cereals ( even the healthy ones ) are depleted of most nutrients because of the process they go through to become 'dry' cereal.

This is an article that seems to give an over view of the whole idea.

Luke enjoying a Great Breakfast

it's funny how when you enjoy studying nutrition your kids pick up good habits and ways of reasoning that help them make good food choices.

One thing that Luke says a lot is. "Mom we're going to have some protein too, right?"

I have so often counteracted requests for breakfast cake, pancakes, or just dairy; like yogurt etc... by saying well maybe but, we need our protein so we aught to have eggs as well.

Some of our favorite breakfasts consist of:

Oatmeal with fruit, nuts

Eggs done about every way

Breakfast cookies like oatmeal cookies

Breakfast breads like banana bread, zuchinni bread,  nut bread, apple spice bread

Rice or barley with fruit and cream.

French Toast with pureed fruit topping.

Buttermilk pancakes/ whole wheat and cottage pudding cake made with yogurt

I add bran to a lot of the baked goods.

Buying local produce is so much better even if what is being offered isn't organically grown.

If you get a fuller tasting food then more than likely it has more nutrition in it. Compare frozen peas, to canned peas, to fresh from the garden peas! Same with tomatoes!! or about anything.

If you read regularly about nutrition you will be more apt to follow your ideals.

If you use birth control you should be extra concerned about the B vitamins they deplete your stores and so before conception you should add extra to your diet.

If you are physically constipated you may be mentally/ emotionally so as well.

At least 75 % of the things offered in a grocery store are inferior in nutrient value.

We often prepare our foods in ways that diminish nutrients.

It's best not to allow yourself and loved ones to get to a crisis point. It is hard work to get back on track and in most cases was unnecessary for you to be in that position in the first place.

A Healthy Breakfast


Just some quick thoughts.

We really need to listen to what the Lord teaches us about our own bodies.

I takes so much time to become in tune with what works best for us and our loved ones. Don't ignor what you've been taught!

We all have different needs but basically the thing that fits all our basic needs is improving nutritional content of our food.

I have been a student of natural health for a good ten years now.

But I am still human and too often eat what tastes good or just what's available at the time rather than for nutritional value.

Eating whole foods is really the easiest way to improve health and teach children how to stay healthy.

When we fall off track our bodies let us know and Lord willing we can make the adjustments that we need to.

Are you having a 'bad' week with the kids or other relationships? Stop and listen to your body. Stop and look at what you have most recently been feeding upon. Your emotions often tell it all.

Frazzled ? Beef up on vitamin B's.

The more refined sugars and flour you allow in your diet the more your vitamin B balance is at risk!

Grab an old copy of Adele Davis' books Let's Get Well and Let's Cook it Right are excellent books. I am pretty sure they are still in print although you may have to request at your local healthfood store.

A lack of the vit B niacin results in confusion, disorientation, clouding of consciousness,  and  can cause hallucinations it can cause totally mental breakdown... Mild deficiencies associated with irritability suspicions, imaginary unfairness, and mental  depression... are common and can prevent family life from being happy.

Let's take a look at increasing our vit B's, niacin, B6, B12, pantothenic acid, and women especially take care to get folic acid. Also get plenty of calcium magnesium.

• Jun. 26, 2007 - Menus for Monday

I haven't been one to do menus regularly but I want to test it out and see if in fact it will save me time and money. I know one thing is gonna have to change I have fallen into being a short order cook particularly in the mornings when we need to make some progress so we can get on with school.

 

For today what I'm planning is.

B: Strawberry Rubarb Sauce ( stevia ) over Buttermilk Wheat Bran Pancakes

L: Chicken Noodle Soup/ Salad

D: Chicken Salad Carrots, Romaine, Squash, Peas, Beets with Olive Oil, Sage dressing

Snacks: Bannana Bread, Apples, Popcorn 

Drinks: Tea and Water
