• Oct. 28, 2009 - Veggie Beef Soup
Veggie Beef Soup
- 1 # ground beef, browned and drained
- 14 oz. beef broth
- 1-1/2 c. water
- 10 oz. frozen mixed veggies
- 14 oz. diced tomatoes
- 1 T. minced onion
Mix all ingredients in a crock pot. Cook on low for 6-8 hours. Or cook on high for 3-4 hours. |

Two-Bean Chili
- 1 # ground beef, browned and drained
- 6 oz. tomato paste
- 2 cans kidney beans
- 2 cans pinto beans
- 2 T chili powder
Combine all ingredients in a crock pot. Cover and cook on low for 4-5 hours. |

Chili Taco Soup
- 2 # fried ground beef, drained
- 2 cans stewed tomatoes
- 1 envelope dry taco mix
- 2 cans pinto beans
- 1 can corn
- 3/4 c. water
- Combine all ingredients in a crock pot.
- Cover and cook on low for 5-7 hours.

Italian Beef Au Jus
- 3# boneless beef roast
- package dry au jus mix
- package dry Italian salad dressing mix
- 14 oz. beef broth
- 4 oz. water
- Place beef in crock pot.
- Combine other ingredients and pour over meat.
- Cover and cook on low heat for 8 hours.

• Oct. 10, 2009 - Using up Leftovers from Chicken & Rice
Earlier this week, I made Chicken and Rice. There was still quite a bit of the rice mixture leftover. Rather than throw it out, I kept it. Later in the week, I made Flavorful Pot Roast. Instead of using baked potatoes or mashed potatoes to go with the pot roast, I pulled out the leftover rice mixture and added a bit of water to it. I covered it and heated it in the oven at 350 degrees for 25 minutes. We put the pot roast over the rice mixture and made it more of a stroganoff-type meal. Very yummy! Plus we saved $ by using up the leftovers from the other night.  |

• Oct. 1, 2009 - October Menu
Here is our menu for the month of October:
- TV dinners (because I work 11-7 that day)
- cheeseburgers (11-7 again, so I picked something easy)
- breaded chicken sandwiches (These are very similar to the McChicken sandwiches from McDonald's. I can buy a package at Walmart for around $6.50 and it will make at least 4 meals, which is much cheaper than buying it at McDonald's. Plus we don't have to use the gasoline in the car to pick up the fast food, and thus, more savings.)
- Salmon patties
- Chicken and rice
- Leftover ham from the freezer (working 11-7 again, so wanted something quick/easy for dd and dh to make)
- Smoked sausage, green beans and potatoes in the crock pot (Again, something easy since I'm working 11-7 that day)
- Spaghetti (I already have the meat browned. I will thaw it and add it to the sauce, then all dd needs to do is heat it and cook the spaghetti.)
- Pizza (homemade)
- Pot roast in the crock pot
- Cincinnati chili (I have some of this sauce already in the freezer, so it will be easy to make on Sunday after church.)
- Comfy chicken soup (my absolute favorite soup recipe)
- Steak stroganoff in the crock pot.
- Leftover comfy chicken soup.
- Fried or baked chicken thighs
- Pizza (a Friday night favorite)
- Fried cubed steak (I coat it with egg and seasoned bread crumbs, then fry it.)
- BBQ chicken thighs in the crock pot. (I can start this before I leave for work in the morning. It will be ready for dh and dd when they get home from church.)
- Wendy's chili (my homemade version)
- Chicken royal
- Leftover chili
- Chicken casserole
- Shake n bake pork (with my homemade version of the shake n bake mix)
- Leftovers or hot dogs (I will be coming off of a 5 day stretch at work, so I want something easy.)
- Bean soup
- Spaghetti
- Leftover bean soup
- Fried chicken or BBQ chicken
- Salmon patties
- Curry chicken in the crock pot
- Sausage, gravy, and biscuits (I used to make my own biscuits, but with working so many hours, I am choosing to buy them so as not to have one more thing to do. It something fairly cheap that I can do to give myself a break.)

• Sep. 30, 2009 - Apple Enchiladas
Apple Enchiladas
- 21 oz. can apple pie filling
- 6 8" flour tortillas
- 1 t. cinnamon
- 1/3 c. margarine (5-1/3 T.)
- 1/2 c. maple syrup **
- 1/4 c. water
- Divide pie filling among the tortillas. Spread so they are evenly covered.
- Sprinke each with cinnamon.
- Roll up and place seam-side down in a lightly greased square baking dish.
- Simmer margarine, syrup, and water in pan for 3 minutes, stirring constantly.
- Pour over enchiladas.
- Bake at 350 degrees for 20 minutes.
- Serve warm with ice cream or whipped topping, if desired.
** You can make this recipe even cheaper by making your own maple syrup.
Maple Syrup:
3 c. granulated sugar
1-1/2 c. water
3 T. molasses
1 t. maple extract
Place all ingredients in a pan and stir until it boils and the sugar is dissolved. Cool, then pour into container.
For a small bottle of maple syrup at the store, it runs around $5.00. To make it yourself, it is less than $1.50 for a medium sized bottle, and it tastes so much better!
Sugar Free Syrup:
1 c. frozen apple juice concentrate (UNSWEETENED!)
1 T. maple extract
2 packets artificial sweetener (Though I haven't tried it, Stevia would probably work just as well.)
1/2 c. water with 1 t. cornstarch, dissolved
1 T. margarine (optional)
Boil all ingredients. Cool. Transfer to bottle.
To buy this at the store, it is VERY costly. As best as I could figure, I think it runs less than $1.00 to make it yourself, and it tastes MUCH better! |

• Sep. 29, 2009 - Calico Beans in the crock pot
CALICO BEANS over RICE
1 onion, chopped
2 tbsp. dry mustard (I prefer much less)
3 tbsp. vinegar
1¼ c. brown sugar
1 c. catsup
2 can pork & beans
2 can butter beans
2 can green beans
2 can kidney beans
Place all beans and onions in crock. Mix mustard, vinegar, brown sugar and catsup together. Add to other ingredients. Cook on low until onions are soft (about 4 hours, but won't hurt to cook longer if away for the day.) Serve over cooked brown rice. |

• Sep. 29, 2009 - Chicken and Noodles in the crock pot
CHICKEN and NOODLES
2# chicken breast
2 cans cream of (mushroom, chicken, whatever)
1 large chopped onion
Place all in crock on low for 4-5 hours. Shred chicken with 2 forks at end of cooking (will literally fall apart for you) and stir in cooked noodles of your choice. Makes a lot.

Chicken Casserole
- 2 c. sour cream
- cream of chicken soup
- 2 t. poppy seeds
- 2-1/2 c. cubed, cooked chicken
- 1-3/4 c. cracker crumbs
- 1/2 c. melted margarine
Combine sour cream, soup, and poppy seeds. Stir in chicken. Pour into a greased casserole dish. Combine cracker crumbs adn margarine. Sprinkle over the top. Bake 25-30 minutes at 350 degrees. |

• Sep. 27, 2009 - Hot Dog Sauce
B&K Hot Dog Sauce
3 # ground beef, fried and drained
1 onion, diced
2 t. paprika
1 t. garlic powder
1/2 t. garlic salt
2 sm. bottles ketchup
salt/pepper to taste
brown sugar (I don't measure it; I just keeping adding a little at a time until it reaches the right flavor.)
Brown meat and onions; drain. Combine all ingredients and simmer for 20-30 minutes. Keep water on sauce if it starts to dry out while simmering. Cool, then you can divide into meal-sized portions in freezer bags. |

• Sep. 27, 2009 - Hot Potato Salad
Hot Potato Salad
6 med. potatoes
1 c. Miracle Whip (I use generic)
1/3 c. chopped onion (I omit)
1/4 c. chopped green onion (I omit)
3 strips of bacon, cooked and crumbled (I use bacon bits)
1-1/2 c. shredded cheddar cheese
Dice and boil potatoes with skin until tender. Drain. Add remaining ingredients and mix thoroughly. Save 1/2 c. cheese to sprinkle over the top. Bake at 350 degrees for 25 minutes.
** To make this a complete meal, I often dice up either smoked sausage or spam and mix in with it.
We have this recipe at every family get-together because everyone likes it so well. |

• Sep. 27, 2009 - Steak Stroganoff
Steak Stroganoff
- 2 T. flour
- 1/2 t. garlic powder
- 1/2 t. pepper
- 1/4 t. paprika
- round steak
- cream of mushroom soup
- 1/2 c. water
- dry onion soup
- mushroom pieces
- 1/2 c. sour cream
- Combine first 4 ingredients in crock pot.
- Cut meat into bite-size pieces and coat with seasoning.
- Add soup, water, and soup mix. Stir
- Cook 7 hours on low heat.
- Stir in mushrooms and sour cream.
- Cook on high 10-15 minutes.
- Serve over cooked rice or noodles.

Wendy's Chili
- 2 T. oil
- 10 oz. French onion soup
- 2 t. cumin
- pepper
- red kidney beans, undrained
- 6 oz. tomato paste
- 8 oz. tomato sauce
- 1# ground beef, fried and drained
- 1 T. chili powder
Put soup in blender and puree. Pour over beef. Cook for 10 minutes. Add remaining ingredients. Heat to serve. |

• Sep. 27, 2009 - Flavorful Pot Roast
Flavorful Pot Roast
- 2 to 2-1/2 # boneless beef chuck roast
- 1 T. dry ranch dressing mix
- 1 T. dry Italian dressing mix
- 2 envelopes dry brown gravy mix
- 3/4 c. water
- Place meat in crock pot.
- In small bowl, combine salad dresings and gravy mixes. Stir in water. Pour over meat.
- Cover and cook on low for 7-8 hours.
- You can thicken the juice for gravy by removing the meat. Turn the heat to high. Bring to a boil.
- Mix 1 T flour with 1/2 c. water. Stir until smooth.
- Pour that into your crock pot in a thin stream, stirring constantly. Continue to cook and stir until it thickens.
- Serve over meat.

• Sep. 27, 2009 - Chicken and Rice
This recipe has been a favorite of ours. The page in my cookbook that has this recipe is quite discolored from having been opened so much through the years.
Chicken and Rice
- 1 can cream of chicken soup *
- 1 can cream of celery soup *
- 1 can cream of mushroom soup *
- 1/8 c. melted margarine
- 1 small can mushroom pieces WITH liquid
- 1-1/4 c. uncooked long grain rice (not instant)
- chicken thighs, legs, and/or breasts
Mix all ingredients except for the chicken in a greased baking dish. Do not precook the rice. Place the chicken pieces on top of the mixture. Sprinkle chicken with salt, pepper, and paprika. Brush with extra melted margarine. Bake for two hours at 300 degrees.
** Instead of buying 3 cans of soup, I just use my homemade cream soup recipe. I make a triple batch of soup. It is MUCH cheaper than paying $3 or more for canned stuff at the store. |

| Instant Cream Soup Mix
Mix all ingredients and store in an airtight container.
To make soup, take 1/4 c. soup mix and mix with 1-1/4 c. water. Heat until it thickens. You can also add broccoli or mushrooms, depending on what kind of soup you like. |
