Winter Treats!

This week I want to invite you to share one of your favourite winter treats. A treat you look forward to making when the snow falls and include the recipe for it so others can try it out.

I just posted a couple of my favorite baking recipes here. You'll find my quick (and easy and cheap!) peanut butter cookies-- be careful not to burn them! Also there is the recipe for chocolate pretzel treat things that EVERYONE loves. Seriously. You cannot go wrong with those.

My favorite cookie recipe that I get requests for as well, and it wouldn't seem like Christmas without, is Mint Spritz. From: "Christmas Cook-Ease by Pat Giocacchini"  Makes: 72   Cook Time: 8-10 minutes

INGREDIENTS:

  • 1 c. margarine, at room temperature
  • 1/2 c. vegetable shortening
  • 1 c. sugar
  • 1 egg, slightly beaten, at room temperature
  • 1 t. vanilla
  • 1/2 t. peppermint extract
  • 1 t. baking soda
  • 3 1/2 c. all-purpose flour
  • 1/4 t. red food coloring
  • 1/2 t. green food coloring
  • 4 T. all-purpose flour

DIRECTIONS:

  1. Preheat oven to 350F.
  2. Beat margarine, shortening and sugar in a large bowl until light and creamy. Add egg and flavorings and mix well.
  3. Stir baking soda into flour. With mixer on low speed, gradually add the flour mixture to the batter.
  4. Divide dough into thirds and place in 3 separate bowls. Set one third aside for plain dough. Add red food coloring and 2 T. flour to the second third. Add green food coloring and 2 T. flour to final third.
  5. Take half of each dough and form a log a little shorter than the cookie press. Place each piece of dough into the press and push dough into the sides of the press, leaving room for each remaining piece.
  6. Using the pinwheel template of the cookie press, fore the dugh through the cookie press onto an ungreased cookie sheet. Sprinkle with red sugar if desired.
  7. Bake cookies for 8-10 mins until cookies show a slight browing along the edges. Cool on a wire rack. Store in an airtight container.

FOOTNOTE:

I didn't divide into thirds and do this. I just made two halves with color (didn't add the flour).
Yield 72 cookies.
65 cal, 4 g fat, 3 mg cholest, 40 mg sodium

And yesterday I made the cake mix spritz that Pampered Chef consultants make at shows. Turned out well!
