M'm M'm Good!

Assignment:  Post your favorite fall recipe/recipes to share.  I love trying new recipes, do you?  It can be baking, main dishes, veggies, dessert or anything else you can think of.  There are no limits.  Mmmmmm..I can’t wait to take a look at some of those recipes.

(This assignment was for last week. I am just a little late getting it up, but I didn't want to miss this one!)

First of all the theme this past week was...M'm M'm Good...it of course comes from Campbell's Soup. I have to say that it made my mouth water to think of my favorite Campbell's soup that I miss a lot because we cannot buy it here in Peru...."Bean 'n Bacon Soup"!

I know, not the most healthy thing to eat in the world but I did eat it a LOT growing up and it was and still is my favorite canned soup. Many fond memories surrounding Bean Soup for me! I loved making up a nice pot full of soup for lunch on a cold Fall day to eat with saltine crackers and our favorite...homemade wheat bread and butter. Only my Mom and sister will know what I'm saying here but "Hatcher Bread and Bean Soup anyone?" 

I think it's sort of a tradition passed down. My Mom and Aunt liked it so much they even sneaked a can of it outside and up and tree to eat it "raw" from the can. They didn't feel so well later so they didn't do that much!

Since I cannot buy Campbell's soup in a can here I sometimes make a pot of bean soup and add seasonings and such until it tastes like what I'm trying to duplicate. Don't have a real recipe so I will not be sharing that today but I do have one other family favorite...Brownies!!

My Mom made this recipe of brownies quite often while I was still at home and they are my FAVORITE!!

I can make them anywhere, anytime and the flavor makes me feel like I'm right with Mom in her kitchen. I made some the other day and took pictures of the process, but they got eaten up before I could take a picture of them when they came out of the oven so you'll have to make them yourself and see what the end product looks like. Maybe that's a way to get you to make them eh? :) 

Fudge Brownies

1/2 cup Butter

1 tsp. Vanilla

6 Tbsp. Cocoa powder

1 cup Sugar

2 Eggs

3/4 cup Flour

Melt butter and cocoa. cocoa and butter

Remove from heat, stir in sugar and vanilla. sugar and vanilla

Blend in eggs. eggs

Add the rest. flour

If you like nuts you can also add 1/2 -1 cup of chopped walnuts (SO YUMMY!!) Or just sprinkle some chopped walnuts on top.

Several ways to makes these:

Spread on a greased baking sheet that has a 1/2-1 inch side, then bake. These turn out more like a dry fudge. (this is how Mom usually makes them...a nice way to eat little bites at a time...til it's all gone!)

OR

Pour/spread into a greased 8x8 or 9x9 baking pan, then bake for taller brownies.

OR

Make a double batch of the above recipe and pour into a greased 9x13 baking pan for taller brownies.

For any of the above:

Bake at 350 degrees for 20-30 minutes. Check on them starting at 20 minutes to make sure they are not overbaked!

Once out of the oven you can let them cool in the pan a few minutes and then sprinkle with powdered sugar or just cut and serve right away. 

They would also be good with melted chocolate chips spread over top. Mmm!

These brownies are good warm or cool.

Serve with coffee, tea or hot chocolate or some vanilla ice cream!
