The finished baby sweater and some freezer meals

A couple of weeks ago, I posted a picture of a knitting project I was working on. The baby shower was this past weekend, so I decided to go ahead and post a picture of the finished project:

We just found out that there are two more ladies expecting at church, so it looks like I will be making quite a few more of these cute little sweaters.

Today, I spent quite a bit of time in the kitchen on what probably was the hottest day of the year here! I checked out a book at the library called Dream Dinners. A friend of mine had already tried one of the recipes, so I was eager to give it a try.

Here is what I made today:

Since the recipes are copyrighted in the book, I am not able to share them with you here. I can tell you the two recipes that I made so you can check the book out at the library and try them yourself! The first recipe is Chicken Parmesan and the other recipe is Cheesy Chicken and Rice Casserole. I also made a huge pot of marinara sauce that was needed for the Chicken Parmesan recipe. All together, I now have 11 meals in my freezer!! And that does not include the extra chicken I was able to use for our chicken enchiladas tonight.

These meals will really come in handy over the next couple of months. It will free up time for baking in the fall which I really enjoy doing. In fact, it is almost September. Almost time to make a homemade apple pie! Yum!

That sweater is precious! I've never learned to knit -- tried a few times but never succeeded. You have a great talent there!

I teach how to plan and prepare freezer meals. My Favorite sites for recipes and plans are www.savingdinner.com and www.organized home.com. Also see Casseroles for Christ to get one recipe that makes 9 frozen entrees.
