My family likes eggs. We use them for breakfast, baking, and lots of dishes. Just like the price of fuels has risen, so, to, has the price of everything else......including eggs. Unfortunately we live in the 4th largest city in the United States, and "raising poultry" is not allowed here. My parents used to have chickens many years ago when they lived out in the country. It was so cool-mom would just go "out back" and gather her eggs for the day. They served for a hearty breakfast and my mom used them to do all her baking. They also kept a rooster. They had plenty of chickens as well. They seemed pretty easy to keep but the rooster was a little nuts I think.
Until the last 2 years, we've been a family of 7 and we do a lot of baking and entertaining. Even just for breakfast-at 2 eggs per person-we'd use an entire dozen +! I enjoy baking, as well. Eggs are an excellent source of protein.
My husband's job keeps us where we are. As it is, he drives a long way to and from work every day. We could move to the country but then his daily commute would be an hour each way, adding to time away from family and much gas consumption! No can do! There are Farmer's Markets here but alas, none close to us-you must drive 20 minutes each way to get to one and they are only open certain days at certain times-not a cost effective way to "pick up a couple of eggs".......
If we ever move out to the country, I think we'll have some chickens.....not too sure about the rooster!
