I managed to get a lot of things done yesterday without taking much time. First, I made yogurt this morning and let it sit in the oven all day. It was timed perfectly so that by the time I needed the oven for dinner, the yogurt was done (that was pure luck). For dinner, I made meatloaf. I had 3 lbs of ground beef thawed and I only needed 1 1/2 for the meatloaf. So I made stuffed green peppers for tomorrow with about half of what was left. Since I needed tomato sauce for the stuffed green peppers, and I buy it in giant cans, I made spagetti sauce. And I still had ground beef left, so I made taco meat. That's 4 meals in one night. And I didn't even have to over exert myself. If I had more time (and the right ingredients) I would have made a batch of lasagna since I had the spagetti sauce out. I love planning ahead and having meals ready made. It makes dinner time so much easier. I could have just thrown the extra ground beef back in the fridge or freezer, but why bother doing that? I was already cooking and messing up the kitchen. The easiest way to start freezer cooking is to double the casserole you are making and throw the extra one in the freezer for another day. Once you try it, you will be hooked.
