Hi, welcome to my blog. I will be sharing our experience as we homeschool 5 boys - our struggles, trials, prayers, and blessings. There are many challenges along the way for any homeschooler and I hope you are encouraged by what you read here. We use Sonlight and My Father's World as our main curriculum. Last year, we started a tradition of crepes with fruit, whipped cream, yogurt and crushed nuts for Christmas breakfast. My dh and I make the crepes together after the kids have opened the gifts in their stockings. We have breakfast and then settled down to read the Christmas story and open the rest of the gifts. We open Grammy's gifts when she gets here in the afternoon and we have Christmas dinner with her.
The goodies I will be making this week: baklava, snowballs, butter crunch and cinnamon pecans. The boys will be giving some of these goodies to their Sunday School teachers as gifts. Here are the recipes:
You should make baklava at least 24 hours ahead of time -- a week is best. The longer you let the Baklava sit, the better it gets. After I have everything gathered and the nut mixture done, I can assemble the baklava in about 45 minutes -- the time before you need to start working on the syrup for the batch in the oven. Each pan makes 35 - 45 nice pieces depending on how close your cuts are. Use those darn corner and funky shaped edge pieces to test how it's doing or as your private reward!
Remember that the frozen phyllo (pronounced FEE-low) dough needs to thaw in the refridgerator for around 6 hours. If you thaw it at room temperature, the individual sheets of phyllo dough will stick together. Once you open the phyllo dough you will want to keep working. I just recently bought phyllo dough that came in two packages. In other words they were half sheets, which I think I like better. I have found that you can melt all of the butter and keep it in a crock pot on low so you don't have to melt butter as you go.
Ingredients you will need:
1 lb Walnuts - Finely Chopped
1/2 C. Sugar
2 tsp Cinnamon
1.5 C. Butter (3 sticks), Melted
1 Package Frozen Phyllo Dough (16 oz) Thawed
1 C. Sugar
1 C. Water
1 Tbsp Lemon Juice
1 C. Honey (Net weight 12 oz.)
1/2 tsp Vanilla
The steps:
Preheat the oven to 300 degrees.
Combine and set aside walnuts, 1/2 cup sugar, and cinnamon
Using a pastry brush, lightly brush the bottom and sides of a 10x14" (about 1-2" deep) pan with melted butter.
Open the phyllo dough and layer 6 whole leafs (or 12 half leafs) in the pan, buttering each layer as you go. (The edges will extend over the side.)
Spread 1 cup of the walnut mixture.
If your phyllo dough comes in full sheets, cut the remaining phyllo dough in half.
Layer 8 half sheets -- butter each layer. Each sheet will be an inch or so short, so stagger the sheets from corner to corner to cover the whole pan. I use a pattern so I don't forget how many layers I've put down, but it's even easier if you have a friend help!
Spread 1 cup of the walnut mixture.
Repeat 8 sheets and walnut mixture twice. You will end up with 4 layers of nuts.
Layer the remaining half sheets on top -- butter each layer.
Brush the top with the remaining butter.
Trim the edges off.
Cut halfway through the layers using the (new and improved right-hand or left-handers) diagram to the right. See my baklava FAQ page for more tips on cutting. (Note: Do NOT cut from corner to corner.) This is done now since it will be very fragile after it's been baked.
Bake 1 hour or until golden brown.
15 minutes before the baklava should be done, mix 1 cup sugar, water, and lemon juice in a sauce pan.
Cook sauce over a medium heat, stirring occasionally for 15 minutes.
Remove from heat, add the honey and vanilla, and stir until well blended.
Remove the baklava from the oven and finish cutting through the layers.
Pour the sauce over the hot baklava.
Cool. Let it sit for at least 24 hours (lightly covered -- but not in the refrigerator) -- longer if you can stand it!
Snowballs
Ingredients
1 C. butter
1/2 C. white sugar
1 T. vanilla extract
2 C. sifted all-purpose flour
3/4 tsp. salt
1 C. chopped pecans
3/4 C. sifted confectioners' sugar
Directions
1. Preheat oven to 325 degrees F (165 degrees C.). Lightly butter 2 baking sheets or line with parchment paper.
2. Cream the butter, sugar and vanilla until light and fluffy. Sift together the flour and salt; mix into the butter mixture. Stir in the pecans. Dust your hands with a little confectioners' sugar and roll the dough into balls.
3. Place 2 inches apart on the baking sheets and bake for 25 minutes or until lightly brown. Put on racks to cool for 15 minutes, then roll in the confectioners' sugar.
I receive a lot of complements on these cookies and have been asked for the recipe several times. My mom made these when we were growing up with the only changes were she used walnuts instead of pecans. My dh doesn't like walnuts so I use pecans instead.
Butter crunch
1 cup butter 1 tblsp light corn syrup
1 cup sugar 1 1/2 cups of dry roasted p. nuts
2 tblsp water
Butter baking sheet. Melt butter in a 2-quart sauce pan over low heat. Add sugar: heat to boiling, stirring constantly. Stir in water and corn syrup. Cook over medium heat, stirring constantly, to 290 degrees on a candy thermometer. Remove from heat: stir in nuts. Pour candy mixture onto baking sheet and spead about 1/4 in. thick. You may have to pound it down with the back of the wooden spoon.. As crunch cools, loosen from baking sheet acouple times with spatula. Let set at room temp. When completely cooled, pat off excess butter with a paper towel both from the top and bottom. Break into pieces. Store in tightly covered container.
Cinnamon Pecans
1 egg white 1 tsp. water
Beat together until it peaks. Use to coat 1 lb. of Pecans.Mix together 1 cup sugar, 2 tsp. cinnamon, 1 tsp. salt pour over pecans and stir until well coated. Bake at 250 degrees for 15 minutes then stir, 15 minutes, stir 5 minutes, stir 5 minutes. Remove from oven, stir and let cool completely. Store in air tight container.
I have never made these recipes before so I hope they come out good. :-) I tried both of these candies at my friend's house and then asked for the recipe because they were so good.
I used to make more goodies but I cut back last year because it was a little ridiculous how much sweet stuff we had around for weeks. Also not great for the waist line! I try to give away things or take them as a dessert for parties and things. I usually have some set out when we have Bible study here too.
I think we will make gingerbread men instead of the house this year. #3 really wants to make gingerbread men so that will be our cooking project for the week. We will also make some "gifts" for the birds and hang them on one of the trees in the yard. I will probably use the gingerbread but press some bird seed into the cookie before baking.

Iris at Sting My Heart is focusing on peace today. Everyone longs for peace - peace in their homes and in their countries. As Iris pointed out one definition of peace is: freedom from disquieting or oppressive thoughts or emotions. Another definition, which encompasses the above definition is: Strong's Concordance 7965 - Hebrew Shalom ..... A word study in the New King James version for SHALOM says: Completeness, wholeness, health, peace, welfare, safety soundness, tranquility, prosperity, perfectness, fullness, rest, harmony, the absence of agitation or discord.
I am so thankful for the peace of God. It is more than being free from conflict on the outside...it is true freedom from conflict on the inside. So many times we appear to be cool, calm and collective but inside our emotions and thoughts are raging. I am so thankful that we, as believers, can have shalom even in our inner being. When the storm is raging call on your Prince of Peace and He will quiet you with His peace. Thank you Jesus for that peace...it is a strong testimony of your work in our lives.
I am also thankful for my MIL and her sister. They have offered to take the boys for a day so that I can have some time to myself.
I am thankful that my dh's new job is going well. The Lord has given him peace, wisdom and strength each day.

I am thankful there is nothing to difficult for our God. If He can create the heavens and the earth through His great power then we can be sure He is able to accomplish mighty things in our own lives.
I am thankful for my husband, who has worked tirelessly this week training in his second job and continues to accomplish work in the ministry. I am thankful for his dedication to the Lord and to his family.
I am thankful for my children. They are each a unique gift from the Lord. They may bring challenges into our lives but they are also a huge blessing.
