Dec. 23, 2008 - It's Beginning to Look a lot Like Christmas

I am ahead of schedule!!  The only reason I can say that is because the schedule changed.  Instead of leaving town today we will leave after church services Wednesday night.  Hubby forgot to let them know at church that we would be gone and they were counting on him being there.  He didn't have the heart to tell them we wouldn't.  So I called my mom and told her we would be coming in with Santa Claus.  At first I was a bit disapointed that we wouldn't leave as scheduled but I was a good wife and kept my mouth shut.  I could have nagged and complained, "Why didn't you tell them?"  but he was blaming himself enough.  Now I will just enjoy my 2 days off.   No school, the baking and the shopping are done, cards are mailed.  I have time to look at blogs.  I have a book that I can read.  Life is good. 

Here is another cookie recipe for those of you still in the baking mood.  This is from the Betty Crocker web site.

Peppermint Snowballs

1/4 cup finely crushed peppermint candies (12 candies)
1/4 cup powdered sugar
1 cup butter softened
1/3 cup powdered sugar
1/4 cup finely crushed peppermint candies (12 candies)
1 tsp vanilla
2 1/4 cup flour
1/4 tsp salt

Heat oven to 325.  Mix 1/4 cup crushed peppermint and 1/4 cup powdered sugar; reserve.  Mix butter, 1/3 cup powdered sugar, 1/4 cup crushed peppermints and vanilla in a medium bowl.  Stir in flour and salt.

Shape teaspoonfuls of dough into balls.  Place about 2 inches apart on ungreased cookie sheet.  Bake 12 to 15 minutes until set buty not brown.  Immediately roll in reserved candy mixture.  Cool completely on wire rack.  Roll in candy mixure again.

The best made plans go astray sometimes! Here it is Christmas Eve, we're leaving in two days, and the teen wakes up nauseated today! I'm just praying that it stays confined to only him and that he gets over it quickly - whatever it is. I've already paid for the whole vacation (hotel and events) and don't know about any refunds. I usually don't do things like paying ahead - just in case - but I was so determined to go - that I booked it.
