Feb. 21, 2009 - Super Cheap & Easy Great Tasting Meals
I wish I had pictures of these family favorite meals, but I will go ahead and post them anyway. Here they are:
Grandma's Pineapple Rice Chicken for a large family (cut in half for smaller family)
One bag of frozen chicken breasts without skin or bone
2 cans of pineapple wuth juice (ring cut)
1 Tbs. of Worchestershire sauce
2 Tbs. brown sugar (or you can easily just use 1 Tbs.)
salt and pepper to taste
Bake this until done. Put some rice in a steamer or cook at least three cups according to directions. Place cooked chicken and juices over a bed of rice.
Easy Chicken Casserole
1/2 cup of cut celery
1/2 cup of cut onion
1 tsp. pimentos
1 can of mushroom soup
1 tsp. Worchestershire sauce
1 cup of rice
1 cup of lowfat milk or water (amount of liquid depends on type of rice is used)
1/2 bag of frozen chicken deboned and deskinned.
Mix ingredients together before adding chicken. Bake covered in a casserole dish until chicken and rice are fully cooked (usually at least forty five mintues depending on type of rice and chicken-thawed or frozen). You can add an extra tsp. of Worchestershire to taste. Also, salt and pepper to taste.
Mexican Pizza Our Style
1 pkg flour tortillas
1 can fat free mexican beans
1 bag of cheddar cheese
green onions chopped finely
lettuce
sour cream
salsa
On a flat stoneware or such, place a flour tortilla down. Then, spread the mashed Mexican beans over it as you would for a sandwich. Next, place cheddar cheese (adults like the chopped green onions after this). Place a final tortilla over the top so it looks like a sandwhich. Stick under broiler. Watch with patience because it browns in just a minute. With a spatulat flip it over and brown other side. Take it out and cut like a pizza. Place on children's plates. Let them add extras such as lettuce, green olives, sour cream, salsa....(as few or more extras as you think they can handle). This is a really cheap yummy meal that cooks up in as fast as ordering pizza over the phone without the price.
