BTW... According to a book we have that breaks down nutritionally each fast food place, CFA is THE healthiest option out there.  It even beats Subway, if you can believe that.  As I'm watching my blood sugar daily now, I was pleased to see that eating the regular CFA sandwich (even with mayo) did not raise my blood sugar beyond a low-normal range.  Woo-hoo!  (Moo-hoo?!)

Easy Recipe for the Office Holiday Party

SWEET BROCCOLI SALAD (can function as a side dish, salad, or even dessert!)

4 cups broccoli flowerets (cut very small)
3/4 cup raisins
1 bottle crumbled bacon bits (or a bit less)
1 cup frozen green peas
1/2 cup chopped green onions

1 cup mayo
1/4 cup sugar
2 Tbsp apple cider vinegar

Combine first 5 ingredients.  Mix mayo, sugar and vinegar.  Pour over broccoli mixture.  Toss lightly.  Refrigerate until chilled thoroughly.  Serves 6-8.

Gluten, Dairy, Egg, Nut, and Soy-Free Holiday Snack

I just altered the recipe for "Chex Muddy Buddies" on the back of the
Rice Chex cereal box and it turned out great in less than 15 minutes, too. 

Free from gluten, dairy, egg, soy and nuts:

9 cups Rice Chex cereal (it's now gluten free!)
1 cup Enjoy Life chocolate chips
1/4 cup of Canola oil (or use butter/margarine if safe)
1   1/2 cups of powdered sugar
1 teaspoon vanilla

Microwave chocolate chips and butter/oil for 1 min 30 seconds. Stir
until smooth. Stir in vanilla. Pour mixture over cereal, stirring to
coat. Pour into gallon resealable bag. Add powdered sugar. Seal bag
and shake until well coated. Spread on waxed paper to cool. Store in
airtight container in refrigerator.


This will be a great "party" snack to serve while all the extended
family is around--and EVERYONE can safely eat and enjoy it!

Walk for a Cure for Food Allergy

Our clan is excited about participating in the Walk for a Cure for Food Allergy.  As you may know,  six out of seven of our children have multiple food allergies.  We've had several frightening moments over the past few years when the children have had allergic reactions to food.  We have to avoid dairy, eggs, soy, nuts, peanut, sesame, all beans and peas, strawberry, watermelon, kiwi, wheat, barley, oat, corn, some artificial coloring, and many other fruits and vegetables.  The allergies vary by child so it can be confusing to keep up with what foods are safe for which child.

The Food Allergy and Anaphylaxis Network (FAAN) provides support to families like ours and helps fund education and research for food allergy.  We are pleased to help raise money for this great organization!

Dairy, Egg, Soy, Corn, and Barley-free Muffins

"Banana" Muffins

You will need: a small, medium, and large mixing bowl; sugar, canola oil, 2 bananas, ENER-G egg replacer, salt, baking powder, and unbleached white flour.

Preheat oven to 400 degrees.
Spray 24 muffin cups with Canola oil spray.

1. In small bowl, mix 3 tsp. ENER-G Egg Replacer with 4 TB. warm water. Set aside. [or beat 2 eggs.]

2. In large bowl, mix 3 1/2 cups Natural Unbleached White Flour [or all-purpose if not allergic to barley], 4 TB. sugar, 5 tsp. (Featherweight or ENER-G brand) baking powder, and 1 1/2 tsp. salt. Set aside.

3. Mix 1 1/2 cups of water [or a safe milk], 1/2 cup sugar, 2/3 cup Canola oil, and 2 mashed bananas.

Combine the ingredients of all three bowls together. Spoon one heaping tablespoon of combined mixture into each of the 24 mufin cups and bake for 15 minutes at 400 degrees.

OPTIONAL: Add one cup of chocolate chips or dried fruit to batter.

NOTES:
These freeze beautifully and are great for food allergic children to have at parties.

Muffins can be frosted once cooled. Or cover with chocolate chips when warm, then spread the chocolate with a knife after 3-5 minutes to make a chocolate icing.

Bananas are not necessary, but when using egg replacer the bananas help make the muffins moist.

Wheat, Egg, Dairy, Soy, and Corn-Free Chicken Nuggets

OVEN FRIED CHICKEN NUGGETS (which are safe for children with multiple food allergies)

Mix 1/2 cup safe flour (we use millet), 1 tsp. salt and 1/4 tsp. pepper in a medium to large mixing bowl.

Cut raw boneless chicken (four-six pieces) to preferred nugget size. (Kitchen scissors make this really easy!)

Coat all chicken pieces in flour mixture in the bowl.

Pour light coating of 100% Canola oil over the flour coated nuggets in the bowl. Stir until all pieces have a light coating of oil.

Place chicken in an ungreased 13 x 9 baking dish. Sprinkle paprika over the top of all nuggets and bake for 20-30 minutes at 425 degrees.

This is my children's favorite thing to eat!

A Plug for Frozen Pizza

"Restaurant Taste in Minutes!" boasts the box.

We tend to agree!  This is the best frozen pizza we've found.  Freschetta "PizzAmore" Take-Out Pizza with BAKE AND SERVE TRAY is really worth the $6.  It's much cheaper than ordering from a chain and the bake and serve tray cooks the crust evenly.  It's pre-sliced, too.  Very Yummy!

Easy Fruit Cobbler

Mix together 1 cup Bisquick, 1 cup sugar, and 1 cup milk.  Set aside.

Melt one stick of margarine in a 2 quart dish.

Pour the Bisquick mixture over the top of the butter but DO NOT STIR.

Add one quart of fruit over the top.  DO NOT STIR.

Bake in a 350 degree oven for 35-45 minutes.

Another Redneck Recipe: Full O' Baloney

I double this recipe; the below is for two people:

1 1/2 cups cubed raw potatoes
1 1/2 cups cubed bologna (1/2 lb.)
2 tbsp. minced green pepper
1 can cream of celery soup
cheddar cheese slices (also works with American)

Heat oven  to 350 degrees.  Mix all ingredients except cheese in a 1 1/2 qt. baking dish.  Bake covered 1 hr. 15 min.  Remove cover; top with cheese.   Broil until bubbly and browned.

These are my husband's favorite leftovers to take to work for lunch.  His co-workers love to make fun of this one!

Blind Bottled Water Taste Test

We heard that both of my brothers detested Aquafina bottled water and would refuse to drink it.  So over the weekend we had a "Water Taste Test."  In the competition was Publix Spring, Nestle, Aquafina, Dasani, and Filtered Tap.  Much to our amusement (and their surprise) BOTH brothers ranked the cup with AQUAFINA as their number one favorite!  Amost everyone ranked the filtered tap water at the bottom of the list.  It was a fun excercise, but bad news for us as now I plan to buy more bottled water and drink less from our fridge filter.   :o)
