Today we had a day at the park planned for our co-op...mainly for a meeting about next year. We were to bring a packed lunch for all of our kids & ourselves during the meeting. Since our family is gluten intolerant (well, four..possibly five of us), I had to make whatever we decided to take from scratch..whether it be bread for sandwhiches,etc. The girls decided they wanted corn dogs, which I tried making the first time the other day. It's something they used to like before going gluten free last summer and haven't had since. So, I broke out my new gf cookbook and tried the recipe in there. They turned out great! So, this is what I made for them this morning to take to the picnic. However, it took a little longer to cook them all than I thought. I got my shower just in time to leave, but had to make a 'quick' stop at Kroger too (which is never quick with four kids in tow). We got out in five minutes...I was so impressed! I still knew we'd be pretty late to co-op (classes BEFORE our picnic at noon). Yep, we were late. I felt aweful, but what can ya do? At least we showed up. I just seriously need to get a better grip on my time management. I always seem to totally miscalculate how much time I need to get things done. That, or something comes up that I didn't even plan on. So, I guess I'm just gonna have to start adding on an extra half hour or so to my time alottment for things. Hopefully that will help. Anyway, the picnic was good. My girls played with their friends and enjoyed playing at the park. I haven't been to that park since I was in high school, and I hadn't seen it without canvas tents there before since I had seen it during a 4th of July festival. It's actually a cute little park...quite nice. We're gonna have to go there again soon. It seems that a lot got done for the planning of co-op for next year as well, along with quite a few summer activities. Unfortunately, I didn't think to bring any paper...but I'm pretty good with remembering dates. Now remember what goes ON those dates is another story. That may take some jangling of my memory for a while. If not, I can always email sisterchicksteph to get the info. She was smart and brought paper...along with a couple other moms. Again, I'm the odd disorganized mom. Oh well. We had a very good time discussing, planning and just goofing around while setting dates. I had to get up a number of times to catch a kid, accompany one to the potty, keep them in sight, etc...which left me trying to figure out what I missed each time I got back to the group. I also wished I could just volunteer my services to the co-op without reservation, but so much is up in the air. My husband's schedule seems to change frequently..usually due to overtime that they call him in for on just an hour's notice a lot of times..sometimes they notify him WHILE he's at work of him having OT that night. They have also changed his shift twice this year and don't know if they will do it again in the future. His shift is not in his union contract so management changes it at will. Also, we have had multiple car troubles in the last month or two...and earlier in the year as well. It is our only vehicle which can leave me without a mode of transportation if something were to happen again. I hate leaving myself out as a teacher for the co-op, but I REALLY hate letting people down. So, I don't usually volunteer for much anymore (anywhere) cause I just don't know how things are gonna play out with our schedule. I mean, just in the last month alone, we have missed three weeks due to not having our van! I don't want to say, "yeah, I can teach ____ class" and then not show up or be able to make it due to my hubby's short notice OT or our on-its-last-leg vehicle. All in all, it was still a very good meeting for us moms and playtime for all the kids. My kids passed out on the way home and I was ready for a nap as well. When I got home I realized why...I got a sunburn!! My three year old also got one. Not fun. Always makes me tired too. Why is that? Man...I hate being pale sometimes. Ugh. Yep, I'm one of those people that drives with their arm on the edge of the window for a whole ten minutes and has a 'lobster arm' when I get out. So, imagine my face and arms after sitting in the sun for a couple of hours at the park this afternoon. I honeslty didn't think I'd get a sunburn this early in the season. WRONG! Next stop...buy sunscreen. |

I felt like such the wet blanket in the group today when they asked if any of us wanted to teach a fourth class they wanted to implement next year. I dont really know what I would teach, but I would teach if I knew all these 'problems' wouldn't arise. Bummer.
