Confessions from the Rubber Room...

• Jan. 20, 2008 - Comfort Food at Its Finest

I'm sure everyone that is reading this has had one of those  years weeks that you just needed a little TLC.  Well, today was one of those days that comfort food was desperately needed.

Don't misunderstand, today wasn't any worse or better than any other day, but I have been feeling kinda yucky lately after a nasty  cold, a case of gastritis and a tooth that needed to be pulled... yesterday.

So I decided to make comfort food.  Now I'm not talking about your typical baked mac and cheese, french fry comfort food, I'm talking the heaven of all comfort foods...Coq Au Vin.

Yes, this is the dish that makes life worth living and angel sing, just in case you have any doubt before trying it.  I'm convinced it could stop a  suicidal man in mid jump; mend broken homes and is most certainly France's only contribution to world peace.  OK, never mind, I can't give France that much credit, but it is my favorite food.  Can you tell I love Coq Au Vin?

And do you know what makes me love it even more?  When I don't have to cook it myself.  Yep, I skipped right out of the house and went to the gym while my capable, talented, future chef daughter made this little bit o' heaven for us today.  Thank you Kylie!

So, if this post is making you salivate and you feel your internal Rachael Ray itching to get out, you can find the recipe here that I use, (which is actually by Emeril - but the thought of having an internal Emeril is a bit frightening.)  And don't forget a big slice of crusty bread & butter for dipping.   Bon appetite!

And why is this comfort food???

Perhaps it is the three cups of wine!

Your daughter's furture husband is going to be very pleased with her cooking skills!

I don't know what makes it sound so good-- the recipe itself or the fact that someone cooked it!

You have such a cute blog. I came over to visit for the first time after seeing a comment you left at another post.
I've always wanted to try this recipe - I love everything French - but I've never done it before. Maybe now is the time!
