Making my meal list.

Well, it's time to make my dinner list. I was thinking of trying something different this time though. I always make a list of meals for two weeks. The problem is, I always forget something at the store. Then I have a day where I can't make something. We then end up going out to eat and spending more money then we would have for that one thing I forgot. So, I am making a list of things I use most all the time. I am going through all my recipes and writing down the stuff I need. I try and stick with recipes that call for simple stuff. Like canned tomatoes or pasta. Things you can have on hand and don't cost alot. This way, I can make a meal list and if I am out of something, there is always another meal I can make. Although the idea is not to be out of anything lol.
I will still make a meal list out because when dinner time comes I need to know. I don't like trying to figure out what to make at the last moment.
When I get that list made, I will post it.

Yard work:
Well, as I said in the last post, it's garden time. We still hope to have the raised beds done by next weekend. I just hope it's not to late to plant.
I do have flowers going though. Boy, it sure is looking nice outside with my roses and cala lilies blooming. And my Wave petunias are starting to spread. The beds will look so nice when they are all spread out on the ground. I still have a spot for a nice lilac tree. Dh seems to think that it will get to big for the front yard, but I heard if you keep it trimed it will be fine.

Garden time

Well, It's that time of year again. GARDEN TIME!!!! I just love getting my hands in dirt. And this year I get to grow some yummy food instead of just pretty flowers. Sence we moved in town, I have just been planting flowers and a tree or 2. But my dh is building me raised beds so I can have fresh tomatoes and peppers. Also, I will be trying my hand at herbs. We also hope to put in 2 apple trees Lord willing. My kids eat sooo many apples that I can't seem to keep up. And with the price of everything going through the roof, who can afford to buy them every other day. So this should save us money.

I do have a website I would love for all of you to check out. This is a family who lives in CA and who grows there own food. They even live in the city like me :-). I hope one day my yard looks just like theres. Chickens and all LOL. I hope you enjoy there updates as much as I do. And I hope it encourages you to try your hand at growing soom or your own food to. It really makes me thank the Lord for all he gives us when I see those little plants coming out of the ground.

No more dog

Well, the dog didn't work out so well. Our other dog's didn't take to her AT ALL. Plus, we could not house break her. No matter how hard we tried, she would still go potty in the house. So, we went to a animal shelter and they said they would find her a good home. Sense she is a pup, they said they would not have a hard time. Everyone who comes in is looking for a pup.
My whole purpose was to get her to a safe place. I hated seeing her out there in the cold. It was a good thing we did bring her in. We got hit with the hardest winter weather here. It lasted 2 weeks. I have never seen snow this deep before. I am sure she would have never survived it.

Well,it was pretty crazy at our house with 3 dogs here. But, everything is back to norm.

I think we have a new famiy member

I was outside last nigh taking the trash out when I found a puppy. She was very cold (it got down to 33 degrees) and she was hungry. My neighbor came out and said she has been hanging out around here a few days now. He has been trying to get the dog to come to him but she was to scared. Well, dogs love me lol. I had her eating out of my hand. She ended up following me in the house where my chihuahua pups want nuts.
Well, I called my dh and asked him what to do. He told me we should try doing something because it was to cold to just let her stay outside. So, I set up a place for her in the kitchen and she ran right to the blanket and went to sleep. I think I won her over with the dog food lol.
When my dh came home from work, he feel in love with her RIGHT away lol. I'm not to sure if we will keep her or not.
Dh looked online to see what kind of dog she is. We know she was a mix of Chihuahua, but wasn't sure of what else. Well, it looks like she is a Chihuahua/Boston Terrier mix. She may have one other thing. We are not sure.
She is such a sweet heart. She just loves the kids, cats and dogs. And she loves to run up to you when you sit down and give you lots of love.
We may go ahead and post pics of her around the neighborhood to see if anyone lost her. Then, if no one calls, we may have a dog.
I will let you know what happens.

This week

Sorry I have not gotten around to putting my meal list down. I am more on top of it then this. But, as you can see from my other entries, I do not always stick with it lol.
So far this week I am just making meals as they come to mind. And that is not until the last minute. Bad plan. I am not ready to cook until I have to lol.
So far though we have had

Spaghetti
Burritos
And tonight I have no idea . But, I will let you know when I know.

I am not helping you am I?    SORRY!!!

Well, I am off to do my laundry and clean my kitchen BEFORE I cook.

Here is this weeks meal list

Sunday: Cabbage soup
Monday: Chicken and black bean Enchiladas
Tuesday: BBQ chicken with mashed potatoes
Wednesday: Meatballs and gravy (didn't get around to making this. Had something quick instead)
Thursday: Homemade mac and cheese ( DH didn't want this. So, dh made Yoshidas with hamburger and rice)
Friday: spaghetti

Here is the Enchilada recipe. Now it calls for just 2 lbs of chicken and you put aside 1 lb for a later dinner. I use both pounds for this one dish. I don't feel 2 was enough. I followed the rest of the recipe adding what it says. It makes about 6 enchiladas. If you like yours really full, it will make only about 4.

This weeks dinner list

I thought I would start putting my meal list down so I could give others some ideas. It never hurts to try something new. If it is a recipe that is new to me, I will post it also.

Sunday: Dirty Rice
Monday: Chicken with Chinese Egg Noodles
Tuesday: lasagna
Wednesday: BBQ chicken with potatoes ( we did not have this. we went to McDonalds instead. We were out late delivering Thanksgiving boxes to the needy).
Thursday: THANKSGIVING
Friday: : Leftovers
Saturday: Cabbage Soup ( we did not have this one also that night. We had more left overs lol)

Here is the Cabbage soup recipe I will be trying. I have not made it before, but it looks ohhh so good.
It is a meatless meal that is very easy on the pocket book.

Rustic Cabbage Soup

1 tablespoon extra virgin olive oil
a big pinch of salt
1/2 pound potatoes, skin on, cut 1/4-inch pieces
4 cloves garlic, chopped
1/2 large yellow onion, thinly sliced
5 cups stock ( you can use bouillon or can broth)
1 1/2 cups white beans, precooked or canned (drained & rinsed well)
1/2 medium cabbage, cored and sliced into 1/4-inch ribbons

more good-quality extra-virgin olive oil for drizzling
1/2 cup Parmesan cheese, freshly grated

Warm the olive oil in a large thick-bottomed pot over medium-high heat. Stir in the salt and potatoes. Cover and cook until they are a bit tender and starting to brown a bit, about 5 minutes - it's o.k. to uncover to stir a couple times. Stir in the garlic and onion and cook for another minute or two. Add the stock and the beans and bring the pot to a simmer. Stir in the cabbage and cook for a couple more minutes, until the cabbage softens up a bit. Now adjust the seasoning - getting the seasoning right is important or your soup will taste flat and uninteresting. Taste and add more salt if needed, the amount of salt you will need to add will depend on how salty your stock is (varying widely between brands, homemade, etc)...

Serve drizzled with a bit of olive oil and a generous dusting of cheese.

Serves 4.

HAPPY THANKSGIVING

I hope you all have a wonderful day on Thanksgiving.

Our plans are to go over to my dh's family's home and have LOTS of good food. You can never go wrong with that lol. We will spend the day there and have a very nice visit with family.

For all of you who are going for a long trip on that day, I pray you all have a very safe trip. And please don't forget what you are all thankful for. It's when times are hard is the best time to remember those things.

Here's that soup recipe

I thought this one would be a great recipe for this time of year. I do hope you enjoy it as much as we do.

I am posting the recipe the way I have it but, I always triple the amount. This is a small recipe. To give you an idea, we are a family of 4 and when I triple it it feeds us with no leftovers.


Autumn Chowder

2 bacon strips, diced
1/4 cup chopped onion
1 medium red potato, diced
1 small carrot, halved lengthwise and thinly sliced
1/2 cup water
3/4 tsp chicken bouillon granules
1 cup milk
2/3 cup frozen corn
1/8 tsp pepper
2 1/2 tsp flour
2 tbs cold water
3/4 cup shredded cheddar cheese

In a saucepan, cook bacon; remove to paper towels. Drain, reserving 1 tsp drippings. In the drippings, saute onion until tender. Add the potato, carrot, water and bouillon. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until the vegetables are almost tender.
Stir in the milk, corn and pepper. Cook 5 minutes longer. Combine the flour and cold water until smooth; gradually whisk into soup. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from the heat; stir in cheese until melted. Sprinkle with bacon.
