Great Chocolate Cupcake recipe using Pumpkin:


1 Chocolate cake mix
1 can pumpkin puree (not pie filling)
1/2 cup water

Mix all together (no eggs, no oil).  Will be lumpy and very thick, that's okay.  Get as many lumps out as possible and divide into muffin pan (dozen).  Cook 350 degrees for 25-30 min, until firm in center.  Frost as you like (our favorite is cream cheese frosting) and ENJOY!
