Hi,

We have a tradition in our family that the person who's birthday it is bakes his or her own cake. 

We had the grandparents over for my birthday and I made "Hummingbird Cake".  Rather than frosting, we made homemade vanilla pudding from the same book and layered it between the three layers and on top - it was really good, though we were all too full to really enjoy it.

Okay, many days later.... here it is:

Hummingbird Cake

3 cups cake flour (i used white)
2 cups sugar
1 tsp salt
1 tsp soda
1 tsp cinnamon
3 eggs beaten
2 cups chopped bananas
1 1/2 cups salad oil
1 1/2 tsp vanilla extract
1 8 oz can crushed pineapple undrained
2 cups chopped pecans, divided  (i used toasted almonds)

Combine dry ingredients.  Add eggs and oil, stirring until dry ingredients are moistened.  Do not beat.  Stir in vanilla, pineapple, bananas and 1 cup nuts.  Spoon batter into three well greased and floured 9 inch pans.  Bake at 350 for 25 to 30 minutes.  Cool in pans for 10 mins, remove and cool completely.  Spread frosting between layers and on top and sides.  Sprinkles with the remainder of nuts.


We used homemade Vanilla Pudding instead of frosting:



Vanilla Pudding (Pie Filling)


1 cup granulated sugar
4 1\2 tablespoons cornstarch
1/2 teaspoon salt
3 cups milk
3 egg yolks slightly beaten
1 tbls butter, melted
2 tsp vanilla extract

Cook in a saucepan over medium heat until thickened.
