Butter Cookies

I just tried these butter cookies.  They are absolutely delicious!  I love butter cookies, especially around the holidays; however, I have always detested only getting them in a tin.  These butter cookies can be shaped and topped with almond halves before baking.  I put my chocolate almond frosting on them instead though.   I served them to all the kids playing in our front yard.  The cookies are an immediate success!Image

 

INGREDIENTS:

  • 1 cup butter
  • 1 cup sugar
  • 1 teaspoon vanilla extract (frankly, I prefer almond extract)
  • 2 cups all-purpose flour, sifted or stirred before measuring
  • dash salt
  • 1 teaspoon baking powder
  • blanched almond halves (optional)

 

  • PREPARATION:

    Cream butter and sugar until light and fluffy. Add vanilla. Sift together flour, salt, and baking powder. Stir dry ingredients into butter mixture; mixing until well blended. Shape dough into small balls. Place on ungreased cookie sheets; press an almond half into the top of each ball. Bake butter cookies at 300° for 20 minutes, or until just lightly browned. Makes 5 to 6 dozen butter cookies.
