Hi everyone! Just another quick post to say hello! I FINALLY finished with my tomatoes, but instead of taco sauce and chili sauce I decided to make pizza sauce! We do a lot of homemade pizza around here, so canning pizza sauce made more sense! So between my seasoned tomato sauce and pizza sauce, I'm happy...and so glad to be FINISHED!
Today, I'll be making strawberry-fig preserves. We have a fig tree full of figs, and I hate to see them go to waste. My folks don't particularly care for fig preserves, but they LOVE the strawberry-fig variety. And you really can't tell the difference between that and preserves or jam made from strawberries. The recipe is so easy and very economical. Here's how I do it, but of course I multiply my recipe depending on the number of figs I have.
STRAWBERRY-FIG PRESERVES
3 c. mashed figs
3 c. sugar
1 pkg. strawberry gelatin (I use the 3/$1 store-brand from Dollar General)
Sterilize 3 pint canning jars. Mix ingredients in boiler and bring slowly to a boil on medium heat. Boil for 3 minutes and pour hot preserves into hot jars. Wipe jar rims and adjust lids. Process in a hot water bath for at least ten minutes.
For people who don't like figs, this is a great way to use them 'incognito'! LOL I'm not a big fan of raw figs myself, but I like this variation! Delicious! Enjoy!
Our youngest, who is twelve, loves to grow things. We garden in pots for now & he is thrilled when another tomato ripens. I have to find many uses for them because he really enjoys the fact that "his" tomatoes are in our meal. It is so very hot in Arkansas that we have to keep a close watch on our plants or they keel over quickly. I enjoy new recipes & hope you will post more!
