Well I’ve started up school for the year and on of the things my mom is having me do is a cookbook project. What I have to do is get recipes, (not Jell-O cool whip casserole) and lay them out like you would in a cookbook. Although I haven’t gotten very many recipes, so if anyone would leave recipe on my comments that would be great!

Green Beans and Mozzarella Cheese Salad
2 cups fresh green beans, cut into 2"pieces
6 plum tomatoes, washed and sliced
8 oz. mozz cheese, cubed
1/2 cup Italian salad dressing
1/3 cup fresh basil
1/4 tsp. salt
1/8 tsp. pepper
Place beans in small sauce pan and cover with water. Bring to boil; cool, uncovered for 6 - 8 min. or until crisp-tender. Drain and rinse in cold water.
Place beans in large salad bowl. Add the remaining ingredients; gently toss to coat. Cover and refrigerate for 1 hour before serving.
Yield 6 servings.
Variation:
I like to use little grape tomatoes cut in half instead of the plum tomatoes.
