I'm baaaackkk!
Helloooo  Helloooo Helloooo.........

That's supposed to be an echo since it's been sooo long since I've been here my blog has turned into an empty lonely place.  I was wandering around bored on the web and it occurred to me that if I did something somewhat constructive I wouldn't feel like it was quite such a waste of time. 

I'll tell you what's going on right now in my home.  Karen Carpenter is crooning Have Yourself a Merry Little Christmas over the radio; lucky us we have a local radio station that is now  playing Christmas music 24 hours a day till  the new year!  There is a hot fire crackling in the wood stove (I was beginning to think we would never need one this year) and I am eating hot buttered biscuits just out of the oven. 

In the midst of all this domestic bliss are my lovely, angelic children, happily gathered around the table playing with army dolls!!!!  And who is the most rambunctious?  My 15yo dear daughter!!  12yo son just finished changing one angry looking fellow's fatigues, after taking pains to preserve said soldier's modesty by performing the duty under a tent hastily constructed by draping a pillow case over his knees.  These guys have been POTs (prisoners of Timothy) stuffed in a drawer in his room for two years.  I brought them down to list on ebay, and lo and behold they are sudden celebrities.  From the looks on their faces I can tell they haven't quite adjusted to their freedom. 

It was a beautiful day today, upper fifties I think.  Steve and I pulled all the frost bit vines off the porch, it looks bare after having half the porch engulfed most of the summer. 

The last couple weeks I have been doing a lot of mega cooking to freeze.  Willow, who can make some great biscuits for a girl who plays with army men, made 20 recipes of biscuits and 9 of muffins on Saturday.  I have done refried beans, stewed chickens, rice, Salsa Verde, and chicken stock.  This week some friends and I are getting together to make apple pie filling, crusts, mexican filling and chili gravy.  I just love having this tasty food to pull out and make a quick meal.

Well Steve has turned on the tv and I can't think straight anymore.  I'll try to get back sooner this time :))

Someday I may join the recipe club -- that is if I beg enough an you all let me in. Right now I am in a busy season and one more thing just doesn't fit. I think it is exciting that you can all crack open the cook books and plan your meals ahead,

Do you freeze your biscuits and muffins? If so, how do you go about thawing them out? I would love to get started on freezing some 'fast foods'. Anything to make life more simple.

Welcome back. I used to freeze some casseroles, but my family (including me) didn't like the way they tasted (or maybe more the texture?) after being frozen. So now, I mostly keep baggies of boiled,shredded chicken, chicken broth, and beans. Our machine makes 4 loaves of bread at once, so we freeze those, and that lasts almost a week. If I was more organized I could so several weeks worth, huh? I was freezing muffins, but they were pulling them out of the freezer daily, so they were going so fast it didn't seem worth it. Now we just double the recipe, and they eat on them for 4 or 5 days. I really should make more and freeze them, so they could have them more often for snacks. What do you do with your rice. You just cook it and throw it in the freezer? Does it not clump or get mushy?
I finished all of my applesauce--45 quarts! I hope to post a picture of it today or tomorrow.

Hi Jennifer! Muffins I freeze after baking, and biscuits I just cut out and freeze the dough. You put them on a baking sheet and freeze for 15 or 20 minutes then you can toss them into a ziplock w/out them getting squished. When we want some we just put them on the baking sheet and bake at 400 for about 20 minutes. I am still playing with that temp/time to adjust for them being frozen, I just started doing them this way last month. They aren't quite as good as fresh made, but when you are short on time are a lifesaver.

I don't like a lot of casseroles frozen either, Letitia. You are right, the texture gets strange! I do a lot of what you are talking about, just basic things I can quickly put together to make a meal out of like chicken, browned turkey, sauces, onions. When I do muffins I ration them. We may even make fresh batches while we still have some frozen so we still have those for when we need a quick picnic or car snack.

Oh I forgot, to thaw the muffins I just set the bag on the counter ahead of time, or if we want them right away just microwave them.

The fire, the Christmas music, and the hot butter biscuit sound wonderfully comfy. Just curious though, when you said your dd made all of those biscuits did you freeze them cooked or uncooked? I cook meats and freeze them for future use sometimes, but have never done that with biscuits.
