Sarah and I tried to make fudge for the first time, it was quite interesting. I got inspired to try from Canadagirl, her fudge looked yummy. I had 2 or 3 boxes of semi-sweet chocolate squares, which were just sitting in my cabinet. I had bought it by mistake a while ago. I meant to get the unsweetened, which I use to make my brownies, but I picked these up instead. So they've been just sitting there. But I remember seeing on the front of the package it was good for making fudge. So I opened the box, they had an easy recipe in it, so I decided to try it. Sarah and I got the pan out, she started melting the chocolate while I went to get the condensed sweetened milk. Now, here was the first 'issue'. I thought that was the same as evaporated milk. So I try shaking it it mix it up, and I hear nothing, hmmm, did it go bad? I poke a whole in it like I would my evaporated milk to pour it out, and it's all thick. So here I am thinking, man it went bad. I was just about to drop it in the garbage, but didn't because I didn't want it to drip all over the garbage can. So I go online to see if I can make a homemade type condensed milk. Well, as I start reading up on what it is, it sounds like my can is ok. So I ask Mary, and she said, yes it's fine. Wow, that was a close one. By this time the chocolate is melting, because I followed the package and put 2 squares of chocolate in. I pour the milk in, add the vanilla and we pour it into the foil/buttered pan. Sarah looks at it and says, "You know mom, that is really thin, isn't fudge thicker?" Hmmm, I look at the directions again. It said 2 PACKAGES of chocolate squares, 8 squares each! Oh no. So we quickly dump it back in the pan, and add the rest of the squares that are needed. We tasted it when it wasn't set yet, and it tasted good. But who knows if it will set up or not. I always thought making fudge was really hard, and believe me, today made me feel like it is hard. But truthfully, if I had followed the directions properly, I guess it wouldn't have been that hard. But we didn't give up, and it's in the fridge, so we'll see how it goes. I know Paul and Sarah will definitely still eat it, and I will a bit. Truly, I don't like fudge, well, at least the ones I've tasted I don't like. But this wasn't bad. Thanks for the encouragement Mary to try something new.
Now, here is a recipe that Mary asked for. This is very similar to the buckeye cookie recipe I've seen on other blogs. But to me, this is a knock off of a peanut butter cup. Very simple and easy to make. I'm not sure where I got the recipe, just know I didn't come up with this.
Peanut Butter Chocolate Candy
1 cup peanut butter (creamy or chunky)
1 cup (2 sticks) butter, melted
4 cups confectioner's sugar
1 cup graham cracker crumbs (6-7 crackers if grinding manually)
2 cups (12oz) semisweet chocolate chips, melted
Coat a 10x15 rimmed baking sheet with nonstick cooking spray or butter. In a large bowl combine all ingredients except the chocolate. Spread mixture over the baking sheet. Spread the melted chocolate over the peanut butter layer. Score or cut completely, then freeze for 15 minutes. Serve or cover and keep chilled until ready to serve.
Now, that is the recipe, here are some things I do. If I don't have powered sugar I make some by putting regular sugar in my blender and 'blend' it. When you blend it long enough, it becomes powered sugar. Some people add cornstarch to the sugar before blending if using it for icing. I've done it both ways for making this, and it's fine either way. I do have boxes of graham cracker crumbs, but if I don't have any, I will chop up my own graham crackers to make a cup of crumbs. Also, when I use a 10x15 size pan, the chocolate can be a bit thick. I lost my 10x15 pan so I was forced to use a 11x17 pan, personally I think this was much better. I do make sure I score or cut them into the square size I want before freeze. The first time I made this, I froze it first and couldn't cut into the chocolate real easy, lesson learned. After they have been in the freezer 15 min. I break them apart, and put them in a container and just leave them in the fridge. That don't last to long in my house, everyone here really like peanut butter and chocolate mixed.
So that is my adventurous fudge making try today. If it actually works out, I'll be surprised. But since it was my last can of milk, I couldn't try again. If it works, maybe I'll put a picture or two out.
I love fudge. I will make a ton in about 2 weeks. Hopefully, I will not eat a ton! I am glad you were daring and tried something new. You probably learned a thing or two as well.

Good to see that I'm not the only one in the kitchen today. I made cookies and homemade caramel tonight! Yummy. I'll trade some caramel for some fudge. ok?
Yes, I had a nice day. I'm trying to learn how to pace myself. One would think as old as I am, that I'd have figured it out by now. I'm getting much better at cooking a meal to be on the table by 2:00p!
