OK, I have decided to put my muffin recipe I talked about yesterday out on my blog. I have changed it a little, which I think helps with the copyright thing. Plus I did a search, and found the company I originally got the recipe from, so I'll link to them. I'll write the original recipe out first, then I'll tell you my changes. I hope you enjoy it.
Cinnamon Raisin-Bran Bread From Hodgson Mill
1 1/2 cups unbleached flour
1/2 cup sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 1/2 cups wheat bran
1 1/2 cups raisins
1/4 cup soft butter
1 1/2 cups hot water
1 egg or 2 egg whites
1 tsp. vanilla
Preheat oven to 375. Stir together flour, sugar, baking powder, baking soda, salt and cinnamon.
Combine in a separate bowl wheat bran, raisins, butter and hot water. Mix until butter melts. Add egg and vanilla. Mix well. Add the mixed dry ingredients to the wet ingredients, stirring until all ingredients are moistened. Put in a greased loaf pan and bake for 50-60 minutes, until done. (I'm pretty sure this is the original time, I've made it as muffins, and that's how I copied it, so I don't remember the original time for baking it as bread.)
OK, now I know I said muffins, and that's what I do. I have found most non-yeast bread recipes (I've never tried with yeast bread recipes) can easily be made into muffins. Just put them in muffin tins and cut the baking time in half, which is what I do.
I double the recipe, and I use eggs, not egg whites. I spray the muffin tins and fill about 3/4 to 100% full. Bake for about 25-30 minutes.
I store them in the fridge, and I don't know exactly how long they will last, since we eat them all within a week. We usually warm them up in the microwave and put butter on them, yum. Plus, I don't always use that name brand of wheat bran. Actually, I buy my wheat bran in bulk and I have a 25 gallon container to store it in. Because we go through it so fast, it's cheaper that way.
