We are going to friends' house tonight for dinner. I am to bring some cookies. I usually make my chocolate chip cookies, baked in a 9x13 pan. That's my easy way to make them. Just spread out the dough in the pan, bake a little longer, and it's done. This morning, I start to take the butter out of the fridge so it can come to room temperature and I realize I only have 1 egg and I need 2. Yes, I could just run to the store, but first, we are trying to stop that, because we tend to impulse buy. Plus, it had snowed all day yesterday and I don't think the plows had been out yet. And, Paul might be home early today, and I really want to have our lessons done early in case he does. Running out first thing in the morning would put a major dent in that. Then I remember I had asked the journey what she did for egg substitute. She has a son who is way more allergic to eggs than Sarah is, and so I was wondering what she did. She was sweet enough to send me a list of different mixtures you could use in place of eggs in recipes. So today since I only had one egg, I thought, why not, lets give it a try. I figured if it turned out bad because I didn't mix it right or something, we could pick something up at the store on the way to their house. So I used one of the mixtures, and you know what? It turned out completely normal. You couldn't even tell I had used a substitute for an egg. Not even Paulie noticed, and he notices everything that is different. So I thought I would share a picture of the finished product, just to show they 'look' normal too. Plus I'll give the list she gave me, in case anyone is interested.

Here is the list of mixtures she gave me. I've only tried one, which I put in bold letters.
She uses a product called "Egg Replacer" by Ener-G whenever a recipe calls for eggs. She gets it at a health food store.
To substitute eggs in a recipe; use one of the following concoctions for each egg:
1 tsp baking powder, 1 Tablespoon of water and 1 Tbs. of vinegar
1 tsp of yeast dissolved in 1/4 C of warm water
1 packet of plain gelatin mixed with 2 Tbs warm water (don't mix until you are ready to use it or it will set)

Our day has gone pretty well today. Attitudes have been adjusted, so that's nice. The snow has finally stopped, so the kids shoveled the driveway and sidewalks, and they are staying clear. Both kids are just about done with their lessons. The cookies turned out great and I'm half done with my laundry. Plus, I am feeling better. Still coughing a little, a little sore from all the coughing yesterday, but all in all, doing much better. We are all looking forward to going to our friends house tonight. They have a boy that's Paulie's age and they get along great. It will be fun. So I should get off of this computer, and finish up the few things that need to be done today before tonight. Thanks for sharing the egg replacements. The only one I know about is the actual egg replacer powder, since that is very common in gluten-free cooking. Baby E seems to be very sensitive to eggs, so I might need those ideas in the near future as she begins to eat more and more "normal" food.
Thanks for sharing the egg substitutes! This will be good to know for future reference. Here's another version of cookie bars in a pan, if you're wanting a change: Only mix 1/2 package of chocolate chips into the dough. After spreading the dough in the greased baking pan, sprinkle the rest of the chocolate chips over the top. Bake for 4 min. and then take the pan out of the oven. Take a knife and run it back and forth through the dough to give it a marbled look. Put the pan back into the oven and finish baking. These turn out nice and fudgey, especially while still warm. We call them "Marble Squares". Yum!
